Street food and sheep brains: A Moroccan Food Tour in Rabat

When I think about Morocco, the flavorful tagines, spiced olives, and juicy fruit prick my tastebuds as I dream of the country I’ve grown to love. However, warnings of street food have left me with a hole in my experience, never getting a chance to savor flavors as a true Moroccan during my two weeks in Morocco . Enter Moroccan Food Tour .

Started by Mohamed and Omar 14 months ago, they’ve recently completed their 400th tour in Rabat, Fes, Casablanca, Marrakech Tangier and Tetoun. With opportunities to participate in a food tour, cooking class, or experience a home-cooked meal, there’s something for every craving.

On my first full day in Rabat , I arrived at the tour’s meeting point ready to get a taste of Morocco’s capital city. Mohamed met us with a big smile on his face and a timeline of Morocco’s history in his hands. We referred to the map throughout the tour as we learned about different foodie, cultural and architectural influences.

As we made our way though the cobblestone streets, we visited a spice shop, learned about the ingredients of a true Moroccan mint tea, saw black soap (used at a hammam) and found out exactly what these little red pots are for (hint: it’s cosmetic).

Visiting the community baker, we learned that these shops once filled the needs of the entire neighborhood, baking dough brought by the families who lived nearby without ovens of their own. These bakeries are always located near a mosque or hammam, which use the oven’s fire as a heat source for the bath and ritual water. Today, families have their own ovens, and the community baker makes and bakes bread to sell to locals and tourists.

In the souk, shop after shop offered textiles, shoes or clay tagines. In one shop, two gentlemen played a board game as we stopped to admire the work of one of the last two bone artisans in Rabat. If you happen to see yellow markings on the jewelry (like the third keychain in the photo below), you can be sure that this bone was once in a tagine pot, flavored with turmeric before being polished into its final form and sold for 20-30dhs.

Stepping back in time, we entered the Oudayas Kasbah, the oldest part of Rabat. The one-time fishing village is a maze of blue and white walls, a mini Chefchaouen. On these streets, we took advantage of Mohamed’s National Geographic award-winning photography skills and went on a little photo shoot of the beautiful kasbah.

Most tours would include dinner at a restaurant and dessert in the kasbah, but Mohamed saw on my Instagram story that we visited his restaurant of choice, Dar El Medina, on our first day and arranged a special surprise ending to the tour.

A short  Careem (ride-share app similar to Uber that’s popular in the Middle East, Africa, and South Asia) later, we arrived at Mohamed’s home, where his mother had prepared an incredible meal for us. We didn’t speak the same language, but understood the worldwide mother/son relationship as she lovingly scolded him for being an hour late. (At least we got some amazing photos!!) But as we reminisced on the beautiful day we’d had, the mussel tagine, zaalouk, taktouka, and fish tasted absolutely delicious.

We finished the day with a traditional dessert: carrots in orange juice with cinnamon. I’d seen it on many menus, but never gave it a try. Now that I know what I’m missing, my first time won’t be the last.

When first I arrived in Rabat I was warned about “Morocco time,” which is used to describe the common Moroccan  habit of always being late or doing things last minute.                                

Many cultures have similar reputations of tardiness as a result of their collective easygoing attitude. Morocco , however, is different; behind “Morocco time” is a very specific culture of care and intentionality.                                                

Take Ramadan, for example. While most other Islamic countries announce the dates of Ramadan in advance to allow for people to plan ahead, Morocco enlists experts at 270 observation points to visually identify the crescent moon so that Ramadan in Morocco can wholly follow Islamic tradition. When the experts see the first sliver of the waxing crescent moon and cross check it with astronomical calculations, Morocco announces that Ramadan has begun.  Once the moon completes an entire cycle and the waxing crescent can be seen again, it means Ramadan has ended.                                                

It’s hard for an American accustomed to a culture of strict, planned timing for the sake of productivity, to get used to such practice. But it is also a struggle for Moroccans. The days leading up to the announcement are filled with anticipation; Ramadan takes a lot of planning so it can be difficult to figure out logistics, or even mentally prepare without knowing when the holiday will start and end.                                                

We knew, for example, that we would have a break from school for Eid-al-Fitr. But without knowing the date of Eid, we couldn’t yet make travel plans. The only thing we could do was wait until the day of Eid to find out if we were going to get Friday off. Then, along with the rest of the country, we scrambled to book transportation and accommodations before they ran out.

When you don’t know when Ramadan will start or end, when you are forced to adapt to an unforeseen natural schedule, you learn to be present. This is, after all, how Ramadan is supposed to be celebrated.                                                

Moroccans have perfected the craft of living in the moment —  living with intentionality.                

Last week I was in Fez with my study abroad cohort for a group trip. While we were there, we got the chance to take a carpet weaving class run by Moroccan artisans. They showed us the carpet weaving process in which we had to sit for hours, meticulously following the patterns of this traditional handicraft. We were only supposed to be there for a few hours, but it took much longer and was much harder work than we expected. We ended up staying for a total of seven hours, during which the artisans fed us iftar, let us listen to music and helped us through the more technical difficulties of carpet weaving. At the end, we each got to go home with little carpets not much larger than the size of my palm.

These Moroccan artisans allowed us to stay so that we could experience how much work truly goes into carpet weaving and other artisanal products. We gained respect for their craft by fully committing to the process without being subject to time constraints.

This intentionality and present-driven attitude is precisely to thank for the infamous “Moroccan time” trope. And it is also one of my favorite things about Morocco.
