90s kids would know best that Madhya Pradesh has been popularized as the “heart of Incredible India” with the tourism board’s television ads featuring colourful visuals and catchy tunes. From religious sites to dense forests – these advertisements deftly covered most of this state’s charm. But what they forgot to mention was its rich relationship with food. From daily dishes to quick street food, desserts, and puddings to even homemade liquor – each region of Madhya Pradesh is known for its different taste palettes. In the drier areas of north and western parts of Madhya Pradesh, wheat, and meat play an important role, while the south of the state is wetter and is dominated by fish and rice.
Madhya Pradesh cuisine also borrows heavily from its Neighbours. With the Malwa region around the western part of the state, Bundelkhand, and Mewar in the north, the food in Madhya Pradesh has flavours of Rajasthani food (especially the Dal Bafla) and Gujarat (with the Kadhi-Fafda). Poha has become a popular breakfast food in most of North and West India, but the Indori Poha is a class apart. This dish is made of flattened rice cooked with boiled potatoes, onions, curry leaves, and peanuts mixed with spices like turmeric, topped with lemon juice. It is a favourite amongst many Indians and can be found widely in all parts of Madhya Pradesh. But what makes Indori Poha different is the toppings of pomegranate and Sev – which is a noodle shaped snack made of chickpea flour and spices. A popular accompaniment with the Indori Poha is the jalebi. This combination of sweet and tangy food makes for the perfect breakfast – or a quick street side snack!
Dal Bafla is Madhya Pradesh’s answer to Rajasthan’s widely popular Dal Bati Churma. Dal Bafla is often considered to be a dish which is served on special occasions. The Bafla is a small ball made of wheat flour dough. Unlike Rajasthan’s fried Baati, the Bafla is first boiled in water and then baked on iron griddles over dung cake stoves. The Bafla is then dunked in ghee to reduce the dryness and eaten with spicy dal and coriander chutney. In rural Madhya Pradesh, this dish is more popularly known with its traditional name, “Gakad”.
Bhopali Gosht Korma
Owing to its long history of Mughal rulers, the influence of Mughlai cuisine in Madhya Pradeshi food is evident. One such famous dish is the Bhopali gosht korma. This Nawabi dish consists of mutton slow-cooked over several hours with spices that render it rich in taste and so silky in texture that it melts in your mouth. The mutton is served doused in a spicy curry and eaten with tandoori roti. Bhopal’s “Chatori Gali” – a market lane especially reserved for gastronomes and foodies – is the perfect place to grab a piping hot plate of this delicacy.
Chakki Ki Shak
Chakki Ki Shak is yet another Madhya Pradeshi dish that largely owes its origin to Rajasthani cuisine. This dish consists of dumplings made of wheat dough which are first steamed with select spices, then cooked in a curd-based gravy. Traditionally, a local variant of wheat known as Tapu is used in Chakki Ki Shaak. This dish is especially famous in Indore and Neighbouring regions and is a side dish that is majorly prepared during special events like religious festivals.
Biryani Pilaf
Just as Lucknow and Hyderabad are famous for their renditions of the Mughlai Biryani, Madhya Pradesh has its own version too! Mostly found in the region of Bhopal, the Biryani Pilaf traditionally comes with mutton. This dish is quite common in Bhopal, especially in the “Chatori Gali” market. The Biryani Pilaf is often accompanied by Zarda, which is a sweet, kheer-like pudding. Zarda is heavily dependent on dry fruits like almonds, pistachios, and raisins, and spices like cardamom and saffron.
Kadhi Fafda
Kadhi-Chawal is the comfort food of many Indians, but Kadhi-Fafda is a street snack which has its origin in Gujarat but is most popularly found in Madhya Pradesh. This dish consists of Fafda – a Gujarati cracker made of chickpea flour – Eaten with Kadhi – a tangy gravy made of curd and turmeric. Fried green chillies act as a great accompaniment to this dish for an extra punch!
Kopra Patties
Kopra patties are popular street food in Madhya Pradesh. This snack consists of mashed potatoes and grated coconuts mixed and made into balls which are deep-fried after being coated in a layer of besan or chickpea flour. This heavenly snack is served hot, accompanied by tangy coriander and mint chutney. They are also known as Indori Patties and are a popular food during fasts, especially during the Hindu festival of Navratri.
A Paniya is made of maize flour which is then put between the leaves of the Aak Plant (Calotropis Gigantea) and then cooked on an open fire of dried dung cakes. The accompaniments of Paniya are the same as that of Bafla – spicy dal and chutney.
Bhutte Ka Kees
Bhutte ka Kees is a corn-based dish widely famous across the Malwa region. This dish consists of grated corn which is roasted in ghee before being cooked in coconut milk. Spices like mustard seeds and green chillies are used to enhance the flavour.
Badkul is an incredibly famous sweet dish of Madhya Pradesh, mostly found in the Jabalpur region. This dish looks like a jalebi but tastes like a gulab jamun! This godly dessert is made of Khova and arrowroot batter which is deep-fried before being soaked in a sugar syrup – much like jalebi. Badkul owes its name to Harprasad Badkul who first invented this recipe in 1889 in his Halwai shop called Badkul Halwai. You can still visit this shop for an authentic taste of the dish near Kamaniya Gate in Jabalpur.
Doodh Jalebi
The Doodh-Jalebi is a winter favourite of the Khandwa region of Madhya Pradesh. It is a simple delicacy that consists of jalebis dunked in hot reduced milk which is relished very fondly across this region.
Shahi Shikanji
Though folks from Uttar Pradesh know Shikanji to be a kind of lemonade, for people in Madhya Pradesh the Shikanji is quite different. The Shahi Shikanji is essentially a thick milkshake served with a mixture of spices like saffron, mace, nutmeg, and cardamom. The milk used in this Shikanji is reduced for 12 hours, and then cooled for another 12 before being converted into this famed milkshake!
Suli or salfi is a naturally occurring beer extracted from the sap of the mahua tree. It requires no brewing and tastes somewhat like coconut water, with a slightly bitter aftertaste. It is traditionally consumed in cups made of the mahua tree leaves and is also commonly found in Chhattisgarh.

Food Guide: 25 Must-Try Dishes In Madhya Pradesh And Where To Eat Them

Madhya Pradesh’s cuisine is a reflection of its central location. Bound by Bundelkhand and Mewar to the north, Gujarat to the west and Maharashtra to the south, the state has a distinct culture and language, though its cuisine borrows some elements from its neighbours–be it Gujarati kadhi-fafda and khaman ( dhokla ) and Rajasthani style dal-baati – churma with a twist, to the love for poha stemming from its proximity to Maharashtra. Still, MP has its own set of treats unique to certain places.
If Gwalior has its bedai and Jabalpur its badkul , then Burhanpur is known for its mawa jalebis , maande and daraba . Bhopal has a Chatori Gali (Eat Street), buzzing with food stalls selling kebabs and paaya (trotter soup). But all culinary journeys in M.P. begin in Indore, the imperial city of the Holkars. Despite the local fondness for namkeen (savoury snacks) and charkha (spicy) flavours, Indoris love their sweets. So much so, that poha-jalebi is considered as acceptable as macaroni and cheese.
Breakfast rests on the four pillars of samosa , kachori , poha and jalebi . Chhappan Dukaan, a precinct of 56 shops, mostly food joints, is Indore’s street food centre. Visitors flock to local food legends like Vijay Chaat House and Johnny Hot Dog. By night, the party shifts to Sarafa, where jewellery shops down their shutters at dusk and food stalls reclaim the streets. Locals and tourists alike feast on garadu (deep fried yam), sabudana khichdi , dahi bada , bhutte ka kees , kachori , desi pizzas, pasta and Maggi, besides desserts like mawa-bati , khoprapak (a coconut-based sweet), shrikhand and malpua .
Here’s a look at 25 typical treats from the region:
Gwalior’s local snack bedai is a puri stuffed with spiced lentils. Every morning, regulars queue up at S.S. Kachoriwala and Bahadura, an 80-year-old shop in Naya Bazaar for bedai, samosa, kachori, scrumptious jalebis and gulab jamuns. And while you’re on the foodie trail, stop by at Dilli Parathe Wala at Sarafa Bazaar, Agrawal Puri Bhandar at Nayi Sadak and Shankerlal Halwai’s legendary ladoos , which had a big patron in former PM Atal Bihari Vajpayee.
Jabalpur’s version of a jalebi is made of khoya and arrowroot batter. It is believed that the dark coloured sweet with a spongy texture was invented in 1889 by Harprasad Badkul, after whom it is named.
3. Khopra patties
A specialty from the western MP region of Malwa, khopra patties are golden-hued deep-fried aloo bondas with a stuffing of khopra (grated coconut) and dry fruits like cashews and raisins! Insanely delicious, it’s served with green mint-coriander chutney and red tamarind chutney. Try it at Vijay Chaat House in Indore or Amrit Sweets in Dewas.
4. Shikanji
Indore’s shikanji is a thick, milkshake enriched with dry fruits. It is regarded as a concoction created by Nagori Mishthan Bhandar in Bada Sarafa, which still churns out a limited batch daily. Since it is a blend of various ingredients, it is called shikanji (literally ‘mixture’) made from kesar, elaichi, javitri, jaiphal, kishmish, mattha and milk reduced for 12 hours and cooled for another 12 hours before being served cold. Shyam Sharma ji from Beawar in Rajasthan started a small sweet shop 35 years ago and called it Madhuram as he wanted a short and sweet name. Sporting a Krishna medallion, the cheery mustachioed owner, personally ladles out shikanji for visitors. “Aise gatak ke mat peena, ismein alag alag taste khojna!” (Don’t gulp it. Savour it slowly to discover its different hidden flavours). First shrikhand, then rabdi, dry fruit and milk.
A signature sweet from Bhind in Morena, gajak (sesame brittle) is mostly made of roasted sesame or peanuts and cashew, with jaggery and ghee. Gajak is a winter specialty with shops lined with these goodies. In Gwalior, Ratiram Gajak or Morena Gajak Bhandar are trusted for their quality products.
Unlike the Maharashtrian style poha, the Indori poha is much lighter with less use of oil and spices. It is topped with sev or mixture, chopped onion and coriander and served with a wedge of lime. Usually paired with hot scrumptious jalebis, you got to try the combo to believe it.
7. Doodh-jalebi
In the winter months, you’ll often see milk being reduced in large vessels outside sweet shops and hot jalebis dunked in it and served. A Khandwa specialty, the town’s famous son Kishore Kumar often longed to leave Bombay and go back to his roots. His common refrain was, “Doodh-jalebi khayenge, Khandwa mein bas jayenge.”
8. Bhutte ka kees
Across the Malwa region, maize is eaten as bhutte ka kees, made with grated corn ( keesna means to ‘grate’), roasted in ghee and cooked in milk with spices. Sarafa Bazaar in Indore is the place to have it.
9. Dal-paniya
Corn is also used to make paniya or maize flour cakes, sandwiched between aak ka patta (leaves of Calotropis gigantea) and cooked on an open fire of dried cowpat. Best enjoyed at Hotel Gurukripa in Mandu, paniya is slightly bigger and flatter than a bafla, but served with the same accompaniments – dal, sabzi. onion and chutneys
10. Dal-bafla
The traditional bread is bafla , a small ball of wheat dough. The bafla is typically boiled in water, roasted over dung cakes on an iron griddle and dunked in ghee. It is served as a thali meal with dal, kadhi, aloo sabzi and chutneys of garlic and coriander, often rounded off with laddoos. At Hotel Sai Palace near Mangalnath temple in Ujjain, turbaned stewards serve an unlimited meal for Rs. 200.
11. Chakki ki shaak
Another popular local delicacy, chakki ki shaak is made of steamed wheat dough cooked in a curd-based gravy. Tapu, a local variety of wheat, is also used to make sweet cakes that are used in religious occasions and festivities
12. Batla kachori
While kachoris are popular all over the country, in Indore it’s stuffed not with spiced lentils, but with batla (green pea). The best place to have it is Vijay Chaat House, started in 1969 by Dayashankar Thakar of Surat. Their flagship shop D. Harishankar Dhanjibhai Bhajiyawala has been running in Surat since 108 years.
Sev is a savoury noodle-shaped snack made from chickpea flour paste seasoned with spices, sieved and deep-fried in oil. It is of varied thickness and is consumed as a stand-alone snack across MP or as a garnish on poha, mixtures or chaats like bhel puri and sev puri. Each region has its flavour variants–from Ratlami sev to finer Ujjaini sev. In Ratlam, you get long (clove) flavoured sev while in Indore, the lasuniya (garlic) flavoured sev is the rage. Shops sell a mind-boggling assortment of sev: palak (spinach), tamatar (tomato), dhaniya-pudina (coriander-mint) and hing (asafoetida).
14. Burhanpur Jalebi
Unlike regular jalebis, the Burhanpur jalebi is made of mawa and is quite popular at food stalls stretching from Bohri Mohalla to Minara Masjid in Mumbai or Mominpura in Nagpur during Ramzan. Thick and chewy, some add arrowroot to bulk it up, but it is best enjoyed fresh in its city of origin at Burhanpur Jalebi Centre.
15. Sabudana khichdi
Sabudana or pearl sago is used to make khichdi (though its consistency is not like porridge but drier like poha or upma). At Indore’s Sarafa bazaar, Sanvariya Seth mixes the sago pearls by hand, tossing in some chopped onions, coriander, chilli, lime juice and sev
16. Khorasani imli
Malwa’s ancient capital Mandu is home to giant baobab trees, gifted by the Caliphs of Egypt to the sultans of Mandu sometime in the 14th century. Locally, it is called Khorasani imli (tamarind from Khorasan, ancient Persia) and makes a good souring agent for curries like imli ki kadhi. It is deseeded and sold in packets by local vendors, along with other seeds, barks and agro produce.
The region of Khandesh is legendary for its maande (roomali rotis), hand stretched and tossed with flourish at roadside stalls. The workers dexterously fling the rotis on to the upturned tava and then to the take-away counter, where it is neatly folded into rectangles and taken home
Burhanpur’s signature sweet is daraba, made of sugar, semolina and ghee whipped together into a fluffy consistency. The word daraba could be derived from the act of beating. Local INTACH convener and owner of Hotel Ambar, Hoshang Havildar, says the sweet used to be really soft and smooth earlier. “Isey ghoy ghot ke, ghot ghot ke banate the (They used to beat it for hours). It was so fine, if you touched it to your eye, you wouldn’t feel a thing.” Sold at Milan Sweets, it is relished during the annual Balaji ka Mela on the banks of the Tapti river.
19. Kadhi-fafda
Another Gujarati touch, fafda (chickpea flour crackers) is typically served with kadhi or buttermilk based curry. Locals swarm shops like Shri Balaji Chaat Corner in Indore, dipping their fafdas in the tangy curry and biting into fried green chillis.
20. Fried khaman
While khaman (or dhokla as it is better known) is universally loved, in western Madhya Pradesh it is also available in a fried version and sprinkled with chaat masala. While regular khaman is made from besan, for the fried version only Surti khaman, made from chana dal, is used as it is firmer and handles deep frying much better.
21. Baalam kakdi
In Mandu and its surrounding regions, there’s a giant cucumber called baalam kakdi, which is served with salt, chilli and lime. Unlike regular cucumbers, it is lemon green in colour with a soft, fleshy pulp and a texture that’s more like steamed squash.
22. Mawa bati
Similar to a stuffed gulab jamun, the mawa-based dough is filled with mawa, dry fruits and nuts, deep-fried till brown and lightly soaked in sugar syrup. Sometimes, it is dusted with desiccated coconut powder.
If Delhi loves its aloo chaat in winters, Indore goes weak-kneed for garadu, a tuber from the yam or sweet potato family. Cut into cubes and deep fried, it is sprinkled with chaat masala and a dash of lime before being devoured by locals.
24. Kadaknath
Another local specialty is a sooty country chicken called ‘Kadaknath’. Charcoal black in colour, its blood is believed to be dark and even its skin tone is purple-grey. A connoisseur’s delight, this extremely rare fowl is sold at twice the price of a regular country chicken. However, it is not available on regular restaurant menus and patrons must procure it before it can be prepared.
25. Batteesee chutney
Richard Holkar, royal scion of Rani Ahilyabai Holkar, renovated the queen’s royal seat Ahilya Fort in Maheshwar and revived its weaving and cultural traditions. A gourmand, he also authored Cooking of the Maharajas in 1975 and often joins his guests for conversations over a drink or meals. His creation, the legendary Batteesee chutney is a secret recipe involving as many as 32 ingredients.

The Khajuraho erotic temples are one of the top historical destinations in India . If you want proof that the Kama Sutra originated in India, Khajuraho is the place to visit. There are over 20 temples abounding in erotic sculptures. However, more than that, they show a celebration of love, life, and worship.
Bandhavgarh National Park

Bandhavgarh and Kanha National Parks are among the top national parks in India . Bandhavgarh, while being relatively difficult to reach and costly to visit, is the best place to see tigers in the wild in India. The park features dense green valleys and rocky hill terrain, with an ancient fort. In addition to tigers, the park has a large array of wildlife including sloth bears, deer, leopards, jackals, and birds.
Kanha National Park
Kanha National Park has the honor of providing the inspiration for Rudyard Kipling’s classic novel, The Jungle Book . It’s rich in lush saal and bamboo forests, lakes, streams, and open grasslands. As well as tigers, the park abounds with barasingha (swamp deer) and an extensive variety of other animals and birds. Rather than offering one particular kind of animal, it provides an all-round nature experience. The park is well regarded for its research and conservation programs, and many endangered species have been saved there.
The great thing about Gwalior is that it's so accessible -- only two hours drive from Agra and the Taj Mahal in Uttar Pradesh. The main attraction the massive hilltop fort that towers over the city. Reputed to be one of the most invincible forts in India , its history stretches back over 1,000 years. Inside the fort walls are a number of palaces and temples, the highlight being the Man Mandir Palace. At the bottom of the fort is the Old Town of Gwalior, brimming with history and fine examples of Mughal architecture such as the Tomb of Tansen. The Tansen Music Festival is held at the tomb every December.
Orchha is located on the banks of the Betwa River, a comfortable hour and a half south of Gwalior. It's another relatively peaceful place, full of well-preserved palaces and temples, with a distinctly medieval charm. Three main palaces are enclosed in Orccha's fortified walls. The Jahangir Mahal is the largest and most impressive, and its upper levels offer some arresting panoramic views. A stay inside the Jahangir Mahal, at the Hotel Sheesh Mahal, completes the experience. Being a government-run hotel, it's not luxurious but it is full of character.
Madhya Pradesh's capital city, Bhopal, is perhaps best known for the tragic poisoning that occurred there in 1984 when a pesticide manufacturing plant leaked a mixture of deadly gases. The city has two main attractions -- mosques and museums. A particularly fascinating museum is the Tribal Museum, which showcases the tribes of the region and their lives. The Taj ul Masjid, Jama Masjid, and Moti Masjid are fine examples of the city's rich Islamic heritage. There are also two large lakes, the Upper Lake and Lower Lake, inside the city limits.
One of India's little-known UNESCO World Heritage Sites, the Bhimbetka rock shelters, is situated about an hour from Bhopal inside Ratapani Wildlife Sanctuary. There are more than ancient 700 rock shelters there, dating all the way back to the Paleolithic age. Many of them have paintings on the walls.

Sanchi Stupa, northeast of Bhopal, is one of India's oldest Buddhist monuments and a UNESCO World Heritage Site. It was built by Emperor Ashoka in 262 BC after he embraced Buddhism and nonviolence, following his particularly horrific invasion of Kalinga (present-day Odisha). The complex is made up of a number of other stupas, temples, monasteries, pillars and relics. There's also an archeological museum. Sanchi can be visited on a day trip from Bhopal, but it's worth staying in the area as it's a convenient base for numerous other side trips.
Malwa Region Golden Triangle: Mandu, Ujjain, Omkareshwar
The Malwa region of Madhya Pradesh is situated in the southwest portion of the state), with Indore as the point of entry. Ujjain , Mandu and Omkareshwar popularly make up its "Golden Triangle". Ujjain is one of Hinduism's seven sacred cities, and one of the four locations of the Kumbh Mela . Most importantly, it's home to the Mahakaleshwar Temple , which has one of India’s 12 sacred Jyotirlingams
The abandoned city of Mandu was once the lavish home of the Mughals, who indulged themselves by its many lakes and palaces. Mandu's crumbling buildings, encircled by a long 45 kilometer (28 miles) stretch of wall with 12 gateways, still hint of its grandiose past.
Omkareshwar, an island in the Narmada river, is said to appear like the symbol “Om” when viewed from above. It's another of the 12 Jyotirlingam sites, and this, added to the presence of the Holy Narmada, draws generations of devout pilgrims. It's popular with travelers too, as a place to chill out.
Maheshwar, the Varanasi of central India, is a small holy town dedicated to Lord Shiva. Set along the banks of the Narmada river, it's said that only Shiva is worshiped where the Narmada flows, as he's the only god with the inner peace to calm her.

You're unlikely to see a tiger at lesser-known Satpura National Park but it's an excellent place to spend time in nature without the crowds. Notably, Satpura is one of only a few protected forests in India that visitors are allowed to walk through. The Duchess Falls Trail is challenging but you'll be rewarded with a refreshing dip in the waterfall at the end. Other possible activities inside the park include cycling, jeep safaris, night safaris, and canoe safaris.
