Our tour guide will pick you up from your hotel. Please wear comfortable clothes as we will have work on the farm & cooking class.

It will take 30 – 45 minutes to the farm. Our farm is an authentic house in the countryside which is 100% no touristy. On the way, our tour guide will talk to you so that you can get to know about Vietnamese food & culture.

When you reach the farm, there will be a welcoming meal ready for you. This is a small meal for you to get more energy, so that you can explore the farm and get ready for the cooking class ahead.

In your free time, you are free to go to every corner of our beautiful farm to explore.

We will ride bicycle to a local market to explore around. In case you don’t want to do this, you can stay at the farm to explore & relax before the cooking class.

In our special Vietnamese cooking class, you will take part in cooking 04 food in total: Vietnamese minced pork grilled with lemon grass, Vietnamese spring rolls, Vietnamese pancakes , and the special dessert: Mekong Delta jackfruit leaf cakes. After the tour, you can keep the recipe for your cooking later at home.

Vietnamese food always comes with fresh herbs. After the cooking class, we will go to a corner of the farm to collect herbs to use with our lunch.

Dalat is known by some as the city of a thousand flowers, by others as the city of love, and still others as the city of spring. It is a mountainous terrain surrounded by pine forest, where temperatures hover at around 20 degrees Celsius year-round. 

Because of its mild climate, Dalat has become a hub of agriculture in Vietnam. While the south supplies much of the country’s rice, Dalat supplies much of its fresh produce, as well as the iconic and high-octane coffee served at cafes on every corner. 

Agricultural tourism isn’t unheard of in Vietnam, though it isn’t often identified as such.  Hundreds of thousands of people travel from around the world every year to see the impossibly flat and green rice paddies of the Mekong Delta shimmering between rivers and streams. As many more visit the terraces of Ha Giang and Sapa in northern Vietnam to ride motorbikes around the hairpin turns of mountains transformed by autumn into golden steps of grain. 

But agricultural tourism in Dalat is a world of its own, largely because agriculture in general is so different in Dalat. In the past decade, farming has been revolutionized. Biotechnology has won out over back-breaking labor. Farmers are using experimental systems to maximize their yields and minimize their work. As a result, food has become fresher and more abundant – and tourism has become more interesting.

A decade ago, honeymooning couples and families would come to take selfies in fields of flowers or sip coffee in cafes overlooking mountains. Now that “agritourism” is on the rise, tourists come specifically to see and study Dalat’s high-tech farming, both for educational and entertainment purposes. 

Agritourism in Dalat allows visitors to experience culture, cuisine, and nature all in a single trip. Whether picking strawberries, sipping tea, tasting coffee, or planting hydroponic lettuce, here are some of its highlights. 

Hydroponic Farming 

Hydroponic farming is perhaps the most important agricultural development Dalat has seen in decades. Plants are cultivated inside of horizontal rails in nutrient-dense water instead of soil. These are typically shielded in greenhouses. This system completely eliminates the need for most typical fertilizers and pesticides, and allows for precise control over germination and harvest that is impossible with conventional agriculture. 

Because hydroponic plants don’t grow in the dirt, there’s no end to how creative the systems can get. Hydroponic rails can be stacked on top of each other; plants can grow vertically along walls or hang from the ceiling. 

Many of Vietnam’s fruits and vegetables now come from Dalat’s hydroponic greenhouses, and it’s well worth visiting to see how this technology has totally transformed the produce of the nation.

Hanging Strawberry Farms

Strawberries are one of the most interesting plants grown with hydroponic technologies. Conventional strawberries are ordinarily plagued by pests and therefore require chemical pesticides and physical labor interventions. In Dalat, strawberry farmers have begun growing strawberries from the ceiling. Pioneered by the Biofresh Company, the technique has taken off and been picked up by other farms.

These hanging strawberry gardens have become a tourist destination. A 3,000 square meter greenhouse dripping with pink and green strawberry plants is a sight to behold. Because the farmers don’t need to work as hard to grow strawberries, they can focus on the tourism industry and added-value products like jams and preserves. 

Many of the farms offer educational tours, and some will even offer tiny baskets for picking the ripe and juicy fruits. Tourists in Dalat shouldn’t miss the opportunity to indulge in strawberries, because they don’t grow well anywhere else in the country. 

Besides, Dalat has an integrated farm, growing many rare and precious agricultural products only in cold land. This farm is located in the area of ​​Van Thanh flower village with strawberries, giant pumpkins, pepino melons, black tomatoes and many other crops. Going from top to bottom of the valley, you will find areas of hydrangea, daisies, roses, scarlet sage, anthuriums, carnations, snapdragon…. Keep going further down you will see strange fruits that may only be grown in Dalat because of the cool and fresh climate.

City of A Thousand Flowers 

Flowers are one of the primary domestic exports of Dalat, and have long been one of the city’s key tourism draws. Thousands of varieties of flowers are grown in hundreds of farms and gardens, and the weather allows for Western as well as Eastern varieties. 

Some farms, like Thai Phien FlowerVillage, split their focus between tourism and production. Thai Phien grows nearly a thousand different flower species in greenhouses as well as fields, stretching out in bursting color for 230 hectares – and this is just one farm among many.

Contrasting colors grow in infinitely long adjacent rows. Yellow sunflowers compete with blue hydrangeas and fiery red roses in a single field. Neither words nor photos can do justice to the kaleidoscopic effect, made all the more profound under a flat, clear blue sky. 

Centuries of Tea 

Dalat’s greenhouses are for focused experiences, but its tea plantations are where the world opens outwards. Similar to the rice terraces of northern Vietnam, the tea fields here curve around hills in rows of fragrant bushes. And unlike the scientists in greenhouses with their modern technological ease, tea leaves are still picked by hand, by indigenous women in wide-brimmed sun hats and colorful skirts with distinct ethnic patterning. 

A few hundred years ago, this land was put to work to supply the French with tea, everything exported overseas. Now, these farms are owned by Vietnamese families that supply the country and the world. 

Wander down the dirt roads of Cau Dat Tea Hill towards the country’s oldest tea factory, built by the French in 1927. Start the visit in the late afternoon so that the sun has a chance to gild the leaves and touch the sky with color. At the end of the tour, as the weather cools, sit for a hot cup of tea and watch golden hour drape itself over the greenery.

Vietnamese Coffee - Robusta and Arabica 

Vietnam is the second largest coffee producer in the world, and most of the country’s coffee is produced in the Central Highlands, including Dalat. What most people know as “Vietnamese coffee” is Robusta coffee – highly caffeinated, strong, and thick – but Vietnam also produces world-class Arabica coffee beans. This subtler, finer coffee bean has been sneaking its way into the country’s specialty cafes over the past decade, and all of it is grown in Dalat or the surrounding highlands. It’s the only region with the right climate for this delicate bean. 

There are several coffee farms worth visiting in Dalat, growing both Robusta and Arabica beans. A tour to a farm will cover the whole process of coffee production. Start in the dense plantations to see how coffee fruits look on the trees. Most people are familiar with the bean in its dark brown and roasted state, and few people know that coffee actually comes from a fruit, which starts green and turns red when it’s ripe.

Many commercial plantations harvest coffee at any stage, scooping up unripe green beans to roast alongside plump red ones. Artisanal coffee is picked at its peak, each bean carefully chosen to be free of defects. 

Follow the process to its completion, as the beans are removed from the fruits, fermented, dried, skinned, and finally roasted and brewed. 

The final cup of coffee, enjoyed on a patio overlooking the plantation, after a half-day spent learning about its production, will inevitably taste completely different. This is the beauty of agrotourism in Dalat: all fruits are sweeter when the labor to produce them is fully understood.

After the 13day farm, horticulture and garden tours Vietnam, our tour leader sent us a trip report to make our coming farm tours better and better.

Hello Thai and Hai, Friday 20th of January: Check-in was straight forward and plane took off on time with lunch served a couple of hours later.

Saturday 21st January: Met up with Angela from Glasgow and Peter and Marion from Heathrow in Dubai and again flight departed on time with breakfast served mid-flight. On arrival in Hanoi met Thai and transferred to hotel arriving 2.30pm. At check in they had the Pickervances still on the list and were missing Stephen and Val off the list. Not sure why when the Pickervances had cancelled quite a while ago. Just changed the names on the list and this was the case for all the hotels.

The public areas of the hotel are very nice as are the bedrooms with enough space and decent bathrooms. However the carpet in the corridor outside the bedrooms was very badly stained which was a pity as it let the hotel down a little. Thai gave a short talk before we left for dinner which was a 5 min walk away. Dinner was typically Vietnamese and they all enjoyed it.

A Visit To Phu Quoc Pepper Farm, Vietnam

Phu Quoc island is famous for its turquoise blue beaches such as Sao Beach and Ong Lang beach and its pepper. Phu Quoc pepper is one of the finest pepper you could find in Vietnam .

About Phu Quoc Pepper

Although the main harvest season starts from February to July, you can visit the farms at any time of the year.

The peppercorn in Phu Quoc is still harvested by hands and divided into three types:

  • black pepper
  • white pepper

The red pepper is the best one, and it’s especially famous for its heat and strong aroma.

The farmers in Phu Quoc do not use any chemical fertilizer but only natural ones. Also, the peppers are dry naturally by the sunlight and not with a machine as in other regions.

Phu Quoc produces about 1,000 tons of the best quality peppercorn on the market, and there is approximately 385 ha of pepper farms.

You will find most of the pepper plantations in Cua Dong and Cua Can Villages.

The pepper farm is definitely worth visiting and experiencing on your trip to Phu Quoc island, Vietnam.

I visited a few farms in Phu Quoc, and my favorite one is Phu Quoc Peppercorn.

Peppercorn is located in the North of Phu Quoc island, quite close to Starfish beach , Rach Vem beach.

This farm offers excellent farm tours for 30,000 VND or $1.5 per person and takes you to pepper farm, vegetable garden, and beer brewery.

After the farm, we visited Kinh Beer brewery. It’s a local beer made from four basic ingredients: Barley, water, hops, and yeast.

You can find Kinh beer in many restaurants on Phu Quoc island.

Our last stop was the cafe. Here, we had some pepper tasting, and each of us also got a cup of pepper tea. The tea had an interesting taste, as it was mixed with honey, cinnamon, and pepper.

Muoi Cuong Cacao Farm – Official Can Tho Visitor Guide

Cacao (scientific name: Theobroma cacao). Cacao has wild roots in the tropical forests of Central and South America. In Vietnam, Cacao was introduced very early, followed by Western missionaries. Currently, Cacao are widely planted in many places, particularly the Central Highlands is still considered as the most ideal conditions for Cacao development. A visit to Muoi Cuong Cacao Farm is both a fun and educational experience in Can Tho. Visitors can see and learn how fruit from a cacao tree becomes familiar cacao products such as cacao powder, butter…and of course pure chocolate in a manual way by the locals.

2. Travel Guide to Muoi Cuong Cacao Farm

The Mười Cương Cacao Garden has an area of ​​1,2 hectares, planted with 2000 Cacao trees, was built in the 1960s and has been maintained until now. Cacao processing has been a traditional family business since 1960. In the beginning, Cương’s father went to Malaysia to bring seeds to Vietnam and grew them. In his hometown, there has been more and more farmers growing after 3 years. When the trees were so fruitful, but the locals did not know how to use their fruits, they ruined all of them. Apart from Cuong’s family, the father asked his children not to cut down trees and had his children find information from books and documents to know how to make chocolate, then they tried to make it from Cacao. At that time, Cuong came across a French book, his sister and he read and studied. Fortunately, they made excellent chocolate products (1963). He still holds the book until now. This family is one of the first families in Vietnam growing and processing Cacao.

People have given Cacao products good compliments, so they make chocolate from Cacao to welcome guests on every occasions such as Tet holiday.

There are two types of Cacao in Mr Cuong’s garden: the species give green and red fruits, but both of them turn yellow when Cacao gets ripe. These trees give fruit all year around,  and they are harvested once every 10 days. Cacao beans contain about 30 to 45 seeds. Dry Cacao beans are sold to foreign companies and chocolate companies in Saigon. His garden is a kind of organic and ecological garden, so he does not use pesticides or chemical fertilizers.

Products made from Cacao :

+ Cacao mass: 100% Cacao, bitter, used for all kinds of Cacao such as black chocolate, milk chocolate, peanut chocolate.

+ Cacao butter: Cacao contains oil, Cacao beans contain 30 to 40% of the oil, called Cacao butter for white chocolate, as a cosmetic (due to its high levels of collagen and vitamin E).

+ Cacao powder: 90% bitter Cacao powder, add sugar, milk or cake to drink.

 + Pre-mixed Cacao powder: 70% Cacao, 30% sugar, milk, used immediately after pouring hot water into the powder.

+ Cacao beans: seeds are roasted and peeled silk. The Germans enjoy it (they mix it with yogurt to eat). This type of product is also very popular in the United Kingdom, the United States and Canada.

+ Vang cacao: made from rice paper outside the seeds, they are fermented into wine, used as an aperitif, good for the digestive system.

The process of molding chocolate from Cacao:

To make a chocolate bar, there must be many stages, starting with the harvesting, processing of Cacao beans before they are delivered to the manufacturing plants.

Harvesting of Cacao: the fruit is yellow or reddish orange depending on the variety, when fruits are ripe, it is easy to peel and at that time, Cacao beans have high avocado content and good aroma. In contrast, if the fruits are still green, it will be difficult to peel and when fermented, seeds will be in poor quality. If the harvest takes place late, the fruit is prone to damage due to pests, destructive squirrels or seeds sprouting in the fruit. The harvester uses a knife then pulls and gently slices the Cacao from the trunk, avoiding collision damage to the trunk and the remaining flowers for the next crop. 1-2 times per week when harvesting, the harvesters should harvest spoiled fruits to avoid spread of germs. Also, when transporting fruits, the harvesters should avoid fruit breakage, it will cause fermentation, rot, or germination, and quality deterioration. After harvesting, it is better to put them in a cool storage place for 3 to 6 days. The fruits should be left for about 5 days on a wooden floor, about 5cm from the ground.

Separating Cacao beans and outer shell: A Cacao can contain 45 to 50 Cacao beans. Cacao beans are not brown and do not have the sweetness of finished chocolate as many people think. Make sure to keep the grain of Cacao beans which is the fermenting agent for the grain.

Fermentation: Cacao beans are placed on the surface of the heated tray which is large and shallow and then covered with a layer of banana leaves. If the weather is favorable, Cacao beans can be fermented under the sun. The fermentation process occurs when the seed turns brown like chocolate. This stage takes place from 4 to 5 days for the dry season, 5-6 days for the cold season. It takes 2 days to turn the seeds once to make the fermentation process easier and when the seeds are spinning, the temperature will be higher (about 45 – 50 degrees) and make sure the bottom of Cacao beads run out.

Drying process: After fermentation, the beans must be dried before they are put into sacks and transported to chocolate factories. The peasants only spread the beans on the tray and dried in the sun. This process usually takes about a week. When being dried, the grain weighs only half that of its original weight. After drying, all the grain fermentation process will end when all the seeds turn brown. However, in the rainy season, the beans are dried by the kiln, at a temperature of about 50 degrees Celsius. The producers note that when drying, they try to avoid the seeds smelling smoky and having a strange smell. When moisture reaches 6-7%, it is crispy and brittle.

Cacao roasting and selecting the stage. Cacao beans are first roasted to give color and flavor to the taste of the consumer. Seeds are put into large roasting drum machines. Depending on the type of Cacao, beans are roasted at 250 to 350 degrees Celsius for 30 minutes to two hours. Subsequently, the beads are screened for removal of the outer shell. Cacao pods can be sold as food for both humans and cattle.

Crushing Cacao. After removing the crust, the Cacao kernel is put into the crusher until a liquid mixture is produced from the Cacao butter exuded from the core. Although it does not contain alcohol, this mixture is called “Cacao alcohol”. Cacao is treated with alkaline solution, which helps the mixture not dry back into powder. Then Cacao liquor is mixed with Cacao butter and sugar. If it is milk chocolate, mix fresh milk and condensed or powdered milk, depending on the recipe of each manufacturer.

The penultimate stage is to mix Cacao. Cacao alcohol continues to be mixed and processed so that after adding milk, sugar, the mixture will reach the desired fineness. The basic formulation of milk chocolate consists of sugar, milk or milk powder, Cacao powder, Cacao liquor, lecithin and vanilla. White chocolate contains sugar, milk or milk powder, Cacao liquor, Cacao butter, lecithin and vanilla. Pure black chocolate including Cacao powder, Cacao liquor, sugar, lecithin and vanilla.

Then the mixture continues to be blended between large steel rollers. The process of mixing the fluid is heated and continuously stirred is called “conching”. High quality chocolate will take days to undergo the conching process, while low quality chocolate will take a few hours.

Final process: chocolate molding. The chocolate mixture is poured into the mold and cooled until solid in various shapes. Then, they are packaged and distributed to the store.

From 1975 to 1977, the Foreign Trade Department found some export commodities and when coming to this land, they found that there was a high economic value of Cacao, then they reported to the Central (Ha Noi). Since then, the Minister and high-ranking officials of the Ministry of Foreign Affairs have visited, explored and had a plan for planting this species. Each time having a study visit in Cacao gardens, the participants were up to 40 people including foreigners of the Soviet Union, Bulgaria, Hungary. Mr Cuong was the one who directly make chocolate to welcome guests, they gave good compliments for this chocolate and suggested him make product for sale. Therefore, from then on (1978 – 1980), Cuong combined with Can Tho University Agricultural Faculty to grow seedlings for farmers, the he bought fruits and processes, then sold finished products to tourism companies, vinacafe, Bien Hoa rice cake, Kinh Do cake and he has maintained his business until now. There was also a time of interruption (1990-1995), because there was no outlet, only home consumption, not enough quantity for export. And partly because of the closed economy, people around the world did not know much about this product. Until 2000, the American Farmers’ Association, the Swiss and Dutch organizations supported the Vietnam Department of Agriculture and facilitated Vietnam’s Cacao cultivation. The Ministry of Agriculture has just brought down the University of Agriculture and Forestry Thu Duc nursery and propagation. After that the University successfully researched 15 varieties of TD1-TD15 and there were 4 varieties recognized by the Ministry of Agriculture. Also, Can Tho University selected varieties CT1 – CT6 in the garden of Mr Cuong. Currently Cacao is being grown in Ben Tre, Ba Ria Vung Tau, Gia Lai, Kom Tum, which is used as fruitful breeds of Thu Duc University. Particularly in Mr Cuong’s garden, breeds are imported from Malaysia, grown in the seed, not the same as that of grafted trees. Because Cacao trees are easy to separate (changing root characteristics), seed multiplication is not exactly the same as that of the mother plant, so the tower or extract will provide more assurance. His garden grows all with seeds, he keeps the good trees, and cuts down the bad ones. Maintaining cultivation and production to this day is a traditional family business. This is also a point of purchase of all Cacao of Cần Thơ and Hậu Giang, processed and sold to foreign companies.

In 2012 supported by the Embassy of Denmark, the ambassador visited the garden several times and suggested helping the locals how to make homestay. At that time the local government was building new countryside, so they integrated tourism development to improve the economy, locals’ life, poverty reduction and joined the Danida programme (Denmark support).

Touring a Cocoa Plantation in Vietnam

The taste of fresh cacao is unforgettable. It punches you in the mouth with a deep, honey sweet flavor that resembles a mango more than a chocolate bar. The brightness quickly turns sour, however, with the bite of acid that reminds you how fruity chocolates get their edge. Cacao fruit's flavor is fleeting, too, as the juice begins to ferment as soon as it's cut off from the tree.

Why Visit a Cocoa Plantation

The further you go from the farm, the less pungent the flavor becomes, eventually drying up until it's nothing like its former self. Therein lies one of the many reasons to visit a cacao farm.

Visiting a cocoa plantation (also known as a farm, finca , hacienda , or any number of other names depending on the country) is an experience like no other, and just as the varying names suggest, the experience is different on each one. So even if you can get your hands on some cacao juice or cacao liquor , it's never quite the same as sucking the pulp straight off of a freshly-broken pod.

What makes a cocoa plantation special is the way it takes chocolate out of the context of a supermarket, and back to its origins. A bar of chocolate goes from an item on your shopping list to a living product of hard work. All the antioxidants and flavors that you find in chocolate have their origin on a cocoa plantation somewhere in the world. In the case of some of my favorite chocolates , this unique origin is Vietnam, specifically in the southern half of the country.

Not many cocoa plantations in Asia have any sort of tour or education program, but lucky for us, at least one does. Azzan Chocolate , based in Buon Ma Thuot, Vietnam, has recently started offering tours of its stunning plantation & its nearby fermentary. So let's see what a tour entails.  Note that as of publication, tours are only offered in Vietnamese, Japanese, and English, and by appointment only.

Arriving at the Cocoa Plantation

It's the first Vietnamese word I asked for after arriving at the farm. The owner doesn't speak much English, so I wanted to express my reaction in his own language. Vui means happy. It's the word that goes along with the feeling you get when you see the abundant greenery working in your favor, the cacao trees lining the path and the mango trees neighboring the house on Azzan's plantation. You immediately forget about the half hour it took to arrive from the city.

In May, the organic fields are pulsing with all the effervescent green butterflies that happen to emerge in late spring. Puppies are crawling around and lounging under the bridge; depending on how long you decide to spend there, you may just get to meet some of them. Once you have the chance to walk around for a few minutes, you'll be amazed at the variety of flora planted all around the farm.

A rainbow of flowers lines each young field, a new type of tree or bush being planted each month, just trying to keep up with the owner's imagination.

Tree to Bar Chocolate in Vietnam

Tung, the owner of the farm, has a passion for the land and its people. His operation originally began with only coffee and small amounts of local fruits. Now he keeps as many fruit species as you can name in a dozen breaths, and as the good reputation of his coffee spread across Vietnam, he began looking into how he could give back to the community while expanding his business. Over the last two years, his farm has seen the addition of 1000 cacao trees from 11 different varietals. Adding these to the original 1000 coffee trees, he has quite the land mass working for him!

But since his trees are so young and Tung and his business partners wanted to start learning how to make chocolate right away, they've been supplementing the meager amount of beans they get from their own young trees with cacao from a community of farmers nearby. With the help of a community matriarch, they collect cacao on regular intervals and ferment all the beans in their centralized fermentary. They've been collecting so many beans that they're even selling them to some other makers around Asia.

If you visit, you'll also have the pleasure of traveling out to the collection site for their cacao, and the much older cocoa plantation surrounding it. Whether you go by boat or by car will be up to the weather gods & the capricious rainy season. High season for cacao collection is in May and December.

As for their tree to bar chocolate business, all of the chocolate making happens off the farm and in the city. Just meters away from their cafe lies their chocolate factory; if you're lucky, the door will be open when you visit. Be sure to pick up a few bars from the cafe, either way, as the gorgeous packaging makes for a lovely Vietnamese chocolate gift. To top it all off, Tung himself designs the packaging.

Tasting the Fruits of Our Labor

The choices he's made with his business are ones most entrepreneurs would brag about in all their literature. For every can of ground coffee they sell, five thousand dong (about $0.25) is donated to Operation Smile. Tung also donates 5% of the business's profits to the education of ethnic minority children, specifically the children of the cacao farmers he works with. He himself doesn't speak much English, and I got the sense that he'd have never personally revealed this, but my friend could not stop bragging about Tung's choices for his business. It's not that he's running a charity or a social entrepreneurship venture— it's just how he is. It's his personal belief that if he has wealth, he should share it.

There are few things I admire more in a person than concerted selflessness towards others. Yet this isn't just a facet of himself that he saves for the business. During my visit, in which all he knew about me was that I'd traveled from Korea to visit his farm, he couldn't seem to stop doing this for me. He was so proud of his farm that he was like a kid showing off the garden he'd planted himself, just as the tomatoes were starting to show. One minute he was pointing out the different varieties of cacao, and the next he was poking at a mango tree with the longest stick you've ever seen, unbeknownst to me, catching ripe mangoes.

In less than a minute, he was climbing the next tree to collect jam fruits, and was rolling them down, beaming all the while.

Two minutes later, wandering through the cocoa trees, you hear the thump of a cashew fruit falling to the ground just meters away. And another, this one just a bit closer. Taste the deep, sweet flavor of a sun-warmed mango you peeled with your own hands; refreshing soursop, a piece hacked off for you after waiting in the fridge for your arrival. The sweat drips down your lower back, but you can't bring yourself to care because the bright smile on your face rivals the sunny weather. Rambutan season was nearly upon us. You won't find any apples or oranges in this tropical paradise, though avocados are plenty.

They should name this farm  vui . Because that first sweet taste of cacao reminds you of that first glimpse you had of this place, this paradise, and after that, all you need to do to return is close your eyes.

Fantastic write up, I do understand the movement towards a more sustainable farm model in Vietnam, but reminding people that the difficulty is to come.

As a retired American with a 20 acres cacao farm in the Dominican Republic, it is a labor of love ... Especially when the society is moving towards a more middle class development model.

As with my experiences and those of other fellows, I am left to wonder if growing cacao is meant solely for societies indigenous because the cost structure to produce this crop is definitely for the value added merchants.

Thanks, Myrvin! It's very true that as the middle class increases proportionally in developing nations, cacao will become a less & less popular option for those with land. I hope there will be more value-added businesses developing in countries of origin, but for now, that avenue is also oriented toward more export or continued low margins, at least until the middle class becomes stable. But with an impeding recession, I'm worried about survival of the businesses already in existence. :/

Stephen J. Lyons: In Vietnam, America learned hearts and minds can't be conquered, or did we?

O n a recent drizzly afternoon in the jungles of Vietnam, it was a miracle that I did not blow out my 60-year-old knees, break my ankles or get stung, bit or punctured. The trail I was traversing was a mudslide, and I couldn’t see 2 feet ahead of me.

As I clumsily climbed over a wet log and landed on my rear end, I imagined an 18-year-old farm boy from Indiana, drafted with a low lottery number, arriving in Saigon in 1968.

As his plane taxied, he would have watched the bodies of other kids just like him being loaded onto another plane. He would be jetlagged, anxious, homesick and disoriented. During a one-year tour, his odds of being killed or wounded would be 1 in 10.

He could be one of the 58,000 soldiers killed or one of the 300,000 wounded or one of the 75,000 severely disabled. If he succeeded in returning to the United States, he could be one of the estimated 10,000 Vietnam veterans who would die by suicide, although unofficial estimates run as high as 50,000.

I remember picking up my draft card on my 18th birthday in 1973, when the war was winding down. I threw the card the following year into a trash bin in Grand Junction, Colorado, when I was hitchhiking to California. I wanted no part of the war. And I was not what one would ever call “military material.”

All the wars the United States has been involved with since I’ve been alive have been a waste of lives on all sides. As I saw on my recent trip to Vietnam, communists are in charge of a booming market economy. Construction cranes dot the outskirts of Hanoi. There are no more antiquated Russian-style, five-year plans with meager ration books and empty stomachs.

Our other wars? The Taliban control Afghanistan despite our 20-year occupation. Iraq is a mess. I guess nation building is harder on the ground than on a white paper created by the brilliant minds in the hallways of the Pentagon.

All of our incursions seem to make things worse. Our soldiers die and are maimed, while we wave flags, sing the impossible-to-sing national anthem at football games and trot out injured heroes only to often ignore them later on.

What was America thinking?

This year, Vietnam is celebrating the 70th anniversary of defeating France, a country with a horrible colonial past. Next year, Vietnam will celebrate the 50th anniversary of sending the U.S. packing, too. Two superpowers, with all their bombs and Agent Orange chemical warfare, were bested.

In hindsight, it is not surprising, given the incredible nationalism that North Vietnam’s leader, Ho Chi Minh, rallied to his side against those superior military forces. And we certainly learned nothing from France’s humiliating defeat in 1954.

The lesson we might have heeded? Hearts and minds are impossible to conquer.

When I was shin-deep in the jungle muck, between slips and falls, where I was carrying only a water bottle rather than a 90-pound pack and a M-16 rifle as the Indiana kid would have been toting, I wondered: What the hell was the U.S. thinking?

All the advantage was with Viet Cong forces, who knew every inch of the jungle terrain and were acclimated to the heat and humidity. Long before an American soldier would be aware of the enemy’s presence, the Viet Cong would see the kid marching like a bull’s-eye and attack him with bullets and boobytraps.

The kid really had only a puncher’s chance of not ending up in a flag-draped casket.

And if the kid survived that tour of duty, years later, he would read former Defense Secretary Robert McNamara’s mea culpa regarding the war. In his memoir “In Retrospect: The Tragedy and Lessons of Vietnam,” McNamara writes that “we were wrong, terribly wrong.”

At the end of the book, he admits: “I concede with painful candor and a heavy heart that the adage applies to me and to my generation of American leadership regarding Vietnam. Although we sought to do the right thing — and believed we were doing the right thing — in my judgment, hindsight proves us wrong.”

Tell the wall

Army medic Earl Clarkston said that when he learned that McNamara considered Vietnam a mistake, he thought, as quoted by the Los Angeles Times in 1995: “Tell McNamara to go before the (Vietnam Veterans Memorial) wall and tell the wall that. Let the souls of American veterans hear him say, ‘You died for nothing.'”

McNamara lived to age 93. The soldiers he sent to their deaths did not enjoy such longevity. A trip to Vietnam makes that senseless tragedy even more real.
