When the worlds biggest flapjack fan gets sent a parcel containing protein flapjacks to review you just know it’s gonna be a good day. I mean come on, free flapjacks, that I haven’t had to make, popped through my letterbox, ready to be devoured. AWESOME!

Trek protein flapjacks along with their range of protein energy bars are, as the name would so rightly indicate, packed to the packets with protein. Check out the nutrition blurb on the packet and you’ll spot that each bar contains anything from between 9g up to almost 11g of protein per bar.

The clever little so and so’s at Trek have created their snack bars to suit two very important factors when it comes to exercising. With an optimal 2:1 carb-to-protein ratio, the flapjacks make for perfect post-workout recovery fuel and the energy bars are cold pressed with raw wholefood ingredients which means they are great for endurance exercise as they provide a long lasting source of energy without any of those dreaded sugar spikes. Both are made using gluten-free oats and are suitable for vegans, plus the energy bars also provide 1 of your 5 a day.

I was sent 4 different bars to try out in order to let you lovely lot know what they taste like, so here goes:

Cocoa Coconut Protein Flapjack

When you peel back the wrapper of a protein flapjack and you spy a smooth brown coating peeping back at ya, you know you’re onto a winner. With its crunchy, coconut, oaty base and a good old helping of chocolate on top, these Trek Cocoa Coconut Protein Flapjacks are like the bastard love child of a Bounty and your mum’s best flapjack recipe.  The texture is crunchier than I expected, however I love that you can taste and feel the texture of the coconut and the chocolate topping really helps ‘lubricate’ the bar (well there’s a sentence you don’t read everyday!). A 50g bar is ever so filling, and the chocolate makes it quite rich, so it would be ideal fuel to take on a trek and spread it out with a bite here and there as and when you fancy it.

Morning Berry Protein Flapjack

This tightly packed pale coloured protein flapjack has lovely little flecks of berries running through it. It crumbles easily when you get it out of the packet and although it has a nice sweet berry taste, it is slightly dry for my liking. Having said that, flapjacks aren’t just for fitness fiends, oh no siree they’re also fab for getting you through that mid afternoon slump and these make a fab dunking partner to your afternoon cuppa. Chewy and crunchy at the same time, it kind of tastes a bit like puffed rice exploding in your mouth with each bite.

Cocoa Raisin Protein Flapjack

This is the new flavour on the block and oh what a flavour. Topped with chocolate (hooray to that!) and packed with a tonne of juicy big raisins there’s no doubt this one tastes sweeter and contains more sugar than the other protein flapjacks. And at first, I wasn’t too sure about the taste, however this is the grower of the bunch, the one I kept nibbling and picking at when taste testing. It’s the one that feels the most extravagant and the one you’re most likely to choose as a daily snack, rather than as fitness fuel. Chocolate and raisins in a flapjack, in my eyes you can’t really go wrong!

Peanut Power Protein Energy Bar

First up let’s talk about the genius mastermind that came up with the idea of making this a snappable bar. Yep, this protein energy bar has just made your long run fuelling a hell of a lot easier. Looking like a peanut butter shaped chocolate bar, it has been designed to be eaten in 3 chunks to help fuel you at intervals. And with its slow release energy and its natural whole food ingredients it is a darn sight better than those hideous energy gels!

Smells like caramel, looks like caramel, it’s basically like compacted crunchy peanut butter with a sweet caramel after taste. Yes the sugars are high, but it’s from the natural sugars of the fruit and not from added sugar or syrup. Unlike the flapjacks, this is a cold pressed product, so there is no baking involved. It makes for a slightly chewier bar but there is still a satisfying crunch to it. As well as being gluten free, the Peanut Power Protein Energy Bar is wheat and dairy free too.

A great fuel to slip in your backpack if you’re doing an adventure challenge, as it is packed with lots of energy and is easy to eat as you go along. I definitely plan on taking one out with me on my next long run to see if it makes a difference to how I feel when I run, both during and afterwards.

While store-bought protein bars are fine from time to time, nothing tastes quite as wonderful as making your own wholesome homemade protein bars (or  Oatmeal Breakfast Bars ).

How to Make Protein Bars

Making peanut butter protein bars couldn’t be easier.

Once you have your ingredients gathered, simply melt, stir, press, and chill. Voilà!

Homemade protein bars ready and on demand for all your snacking needs.

The Ingredients

  • Peanut Butter . Healthy fats, protein, and the all-out delicious factor. You can use any kind you like, be it shelf-stable or drippy peanut butter. (For another healthy peanut butter snack, try this Peanut Butter Banana Smoothie .) For a peanut-free version, swap almond butter, cashew butter, or sun butter.

Ingredient Note

The consistency of your batter can vary based on the type of peanut butter you use. If your batter is looser than you would like, simply add an extra tablespoon or two of oats until it holds together.

  • Oatmeal . Rolled oats are hearty, rich in fiber, and give the peanut butter protein bars their structure. Using certified gluten-free oats makes these bars safe for those with a gluten allergy.
  • Honey . For its natural sweetness and “glue” factor.

Substitution Tip

If you would like to make these homemade protein bars vegan, swap the honey for vegan natural sweeteners, such as pure maple syrup or brown rice syrup.

  • Flaxseed Meal . Omega-3s, please.
  • Protein Powder . Pump ’em up! To make these protein bars with protein powder, stir in 1/2 cup (about 2 generous scoops) of your favorite brand of protein powder. (For a protein-packed snack without powder, try Oatmeal Protein Cookies .)

You can use any whey protein or vegan, plant-based protein. I recommend vanilla, though I suspect chocolate would be tasty too.

  • Coconut Oil . To help the bars bind and solidify.
  • Chocolate Chips . No ho-hum bars here. These peanut butter protein bars are loaded with the good stuff. Mini chocolate chips are easy to mix in; for a stronger chocolate factor, use dark chocolate chips or chopped dark chocolate.

Protein Bar Flavor Variations

This homemade protein bar recipe is super adaptable. Countless readers have shared how they’ve made this recipe their own in the comments. Here are some of my favorite ideas:

  • Homemade Protein Bars with Raisins . Add a handful of raisins (or other dried fruit) to the mixture.
  • Peanut Butter Protein Bars with Chia Seeds . Swap all or a portion of the flaxseed meal for an equal amount of chia seeds.
  • Crunchy Homemade Protein Bars . For added crunch, stir in a handful of crisp rice cereal.
  • Homemade Protein Bars with Nuts . Throw in a handful of your favorite chopped nuts for some additional healthy fats. Almonds, walnuts, pecans, or hazelnuts would all be lovely additions.
  • Double Vanilla Protein Bars . Add 1 tablespoon pure vanilla extract, use vanilla protein powder, and swap the chocolate chips for white chocolate chips.
  • Salted Chocolate Protein Bars . Use chocolate protein powder. Drizzle the finished bars with melted chocolate, then sprinkle with flaky salt, such as Maldon or fleur de sel.

The Directions

  • Melt the peanut butter, honey, and coconut oil in a double-boiler and stir until smooth.
  • Remove from the heat and mix in the oats, protein powder, flaxseed, cinnamon, and salt.
  • Fold in the chocolate chips.

If the mixture is still warm, pop the bowl into the refrigerator for a few minutes to let it cool. Cooling the mixture will prevent the chocolate from melting. Don’t worry if they do melt a little—the bars will still be delicious!

  • Press evenly into a square pan lined with parchment paper, then chill until firm. Remove the bars from the pan and slice them into bars. ENJOY!

Storage Tips

  • To Store . Store the bars at room temperature for up to 1 week. You can also store them in the fridge, though I find they taste best at room temperature.
  • To Freeze . Place bars in an airtight, freezer-safe storage container and freeze for up to 3 months.

I like to wrap my homemade protein bars individually in plastic, then remove them from the freezer as needed.

Sure! I prefer to warm my ingredients together on the stovetop to more easily keep an eye on it and better control the heat, but you can heat the peanut butter, honey, and coconut oil in the microwave instead. For best results, warm low and slow in a microwave-safe bowl, stirring periodically, until smooth.

Certainly! While I have only ever made these as bars, the mixture  should  be able to be shaped into balls instead. Keep in mind that you may need to play around with the peanut butter, oats, and protein powder ratios a bit to get the right consistency. Ingredients    1x 2x 3x

  • 3/4 cup creamy peanut butter*
  • 1/3 cup honey
  • 2 tablespoons coconut oil
  • 2 cups old fashioned rolled oats
  • 1/2 cup vanilla protein powder about 2 scoops, depending upon your brand
  • 3 tablespoons flaxseed meal
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/3 cup mini chocolate chips

Instructions  

  • Line an 8×8- or 9×9-inch baking pan with parchment paper, leaving an overhang on two sides like handles.
  • Place the peanut butter, honey, and coconut oil in a medium heatproof bowl. Set the bowl over a saucepan of water and bring the water to a simmer over medium to medium-high heat. (Do not let the water boil, and make sure the water does not touch the bottom of the mixing bowl.) Stir and heat until the mixture is smoothly combined. Remove the bowl from the saucepan and turn off the heat.
  • Add the oats, protein powder, flaxseed, cinnamon, and salt to the bowl with the peanut butter mixture. Stir to combine. The mixture will seem very dry at first but will come together as you stir. It won't be sticky but should hold together when pressed (see recipe notes for more details).
  • Fold in the chocolate chips. (If the mixture is still fairly warm, pop the bowl into the refrigerator for a few minutes to let it cool. Cooling the mixture will prevent the chocolate from melting. Don’t worry if they do melt a little—the bars will still be delicious!)
  • Press evenly into the prepared pan and refrigerate for 1 hour or until firm.
  • Lift the bars from the pan using the parchment handles and transfer them to a cutting board. Slice into bars as desired and enjoy.
  • TO STORE : Store the bars at room temperature for up to 1 week.
  • TO FREEZE : These homemade protein bars can be kept in the freezer for up to 3 months.
  • STORAGE TIP : I like to wrap mine individually, then remove them from the freezer as needed. You can also store them in the fridge, though I find they taste best at room temperature.

How many oz is a serving ?

Hi Maria! The nutritional facts are located at the bottom of the recipe card. The serving size is 1 bar, you will get 12 bars from this recipe. I do not weigh my portions, so that is something you’ll have to do. Enjoy!

I made this recipe today for the first time. Left out the chocolate and added in 1/3 cup chopped pecans. It’s super tasty, but I found it slightly too crumbly and am worried that if I want to take it on the road it won’t hold together. I’m thinking that I could just increase the PB or honey (or both?), that that might do the trick? Any advice?

Hi Erin! Thanks for the recipe :) Just one remark, maybe it’s best to use reusable wrapper (like beeswax wrapper) instead of individually wrapping each bar in plastic. Who knows where that piece of plastic might end!

I was looking for something less sweet. Used unsweetened sunflower butter, soy protein with a little wheat germ. Used some rice krispies and sunflower seeds for crunch, replacing some of the oatmeal. Just a teaspoon of honey, the rest of the sweetner was pure maple syrup. No chocolate. Double cinnamon.

Yummy! These bars are delicious & filling. They are dense and don’t fall apart and have great flavor. Best of all they are super easy to make! I made these with my 2 & 6 year old daughters while holding our new born.

My girls loved making these and they made a few cookies from the batter. We flattened the batter into a cookie sheet in a circle shape. Baked at 400F for 5 minutes. They loved them.

I enjoy these as bars for a snack. They are very filling and don’t raise my blood sugar. Plus the oatmeal makes them good for nursing. Lactation bars are expensive and typically taste awful.

We didn’t use the coconut oil, since our peanut butter was super runny. Also left out the flax seed. Used 1 scoop of BOOBIE Vanilla Cookie protein powder.

(Whey tends to produce gummier protein bars, for example). Collagen Peptides protein powder DOES NOT work with this recipe, so I highly recommend that you stick with the recommended protein powders.   • Coconut Flour - Coconut flour is a great low carb flour that is gluten-free, wheat free, and grain-free. Coconut flour is also nut-free (even though it's called coco-nut) because it's made from coconut flesh (which is a fruit, not a nut) that’s been dried and then grind into small flour particles. Here  is a brand of coconut flour I like to use.
  • Sugar of Choice – I used monk fruit sweetener in this recipe to keep this recipe low-sugar and low carb, but raw cane sugar , coconut , date , and maple sugars are perfectly acceptable substitutes. 
  • Greek Yogurt - I used fat-free Greek yogurt (Fage brand). For a vegan-friendly alternative, try using dairy free (vegan) yogurt made from almond milk or coconut milk, and add 2 Tbsp at a time since vegan yogurt usually has more liquid than Greek yogurt - so you may only end up needing just half the amount called for in the recipe.
  • Peanut Butter - the smooth and creamy kind, like Jif
  • Chocolate Chips - you can use any chocolate chips. To make these protein bars low-carb, use a lower sugar, stevia-sweetened brand ,

In a clean bowl, mix the dry ingredients: protein powder, coconut flour and sugar (I used monk fruit sweetener).

Next, add in the nut butter and Greek yogurt, using your hands to knead and get the dough to combine together.

You can change the dough to a softer or firmer consistency you prefer. Add more coconut flour if the dough is too soft, add more of milk or water if the dough is too thick. TRY TO ADD A TEASPOON AT A TIME! The final dough should be firm, but soft enough that you can roll the dough into a ball without it falling apart.

Shape the protein dough into a rectangular mound, then wrap in plastic wrap or an airtight container lined with parchment, and let the dough set in the freezer for at least 30 minutes.

Use a sharp knife to cut the protein dough into bars. Keep the bars in the freezer until the next step. The longer they stay in the freezer the better!

NOTE: You can take the extra pieces and mold them together into another bar, or roll them into protein balls

Recipe Variations and Optional Add Ins:

  • Feel free to experiment with natural flavoring / extracts. Add a teaspoon of vanilla extract (I didn't feel like it was essential so I left it out in this recipe), or other flavorings or extracts, such as coffee extract or maple extract.

Just keep in mind that some extracts contain alcohol, a nd since this is a no-bake recipe, the alcohol won't have a chance to fully evaporate. If serving this to kids, or if you're sensitive to alcohol, be sure to use non-alcoholic extracts or flavorings. How to Make these Breakfast Protein Bars Healthier

  • Make Greek Yogurt Peanut Butter Protein Bars healthier by adding a handful of nuts, seeds and old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of ground flaxseed , hemp seeds, or chia seeds.

How to Store Greek Yogurt Peanut Butter Protein Bars

  • You can keep the protein bars out at room temperature for 1 day but for maximum freshness and best texture, it's best to store these protein bars covered in the fridge. They'll be fresh for up to 5-7 days.
  • These protein bars also freeze very well! Seal them inside an airtight container or Ziploc bag and freeze them in a single layer so that they don't stick together. I recommend double-bagging if you want to keep out the fridge smell. They can be frozen for up to 4 months.
  • If you want to make the chocolate coating process easier, freeze the protein bars for 2-3 hours before coating so that they're easier to handle.
  • Also, I like to mix in 2 tsp coconut oil (or olive oil) to the melted chocolate. This thins out the chocolate and makes it easier to coat the protein bars.

Ingredients    1x 2x 3x

Protein bars.

  • ½ cup vanilla protein powder*
  • ¼ cup coconut flour
  • 3 Tbsp monk fruit sweetener** , or any granulated sugar of choice
  • ¼ cup creamy peanut butter spread 64g , like Jif
  • 6 Tbsp fat free greek yogurt 100g , strained of excess liquid

Deco (optional)

  • ½ cup chocolate chips , melted

Instructions  

  • In a clean bowl, mix the dry ingredients: protein powder, coconut flour and sugar of choice (I used monk fruit sweetener).
  • Next, mix in the strained Greek yogurt and peanut butter, using your hands to knead and get the dough to combine together.
  • Add more coconut flour if the dough is too soft, add a Tablespoon or more of Greek yogurt if the dough is too thick
  • Shape dough into a rectangular mound, then wrap in plastic wrap or an airtight container, and let the dough set in the freezer for at least 30 minutes.
  • Slice into 6 bars. Keep the bars in the freezer until the next step.
  • Melt chocolate chips in the microwave in 20 second bursts until melted, stirring in between
  • Dip the protein bars into the melted chocolate and then set it aside on a clean parchment paper. Drizzle with more chocolate if desired.
  • Let the chocolate set before enjoying

Hi there! Unfortunately, I haven't tried another flour substitute with this recipe. You could try almond flour, but you may need more than 1/4 cups since almond flour does not absorb liquids very well which would give you a softer dough. Hope this helps!

Hi I'm wondering what alternatives to coconut flour I could use? I'm allergic to coconut, so it's not an option to me. Could I just use more protein powder?

Hi MJ, oat flour can be a suitable alternative to coconut flour. It might yield a slightly different texture, but it should work!

How do you dip the bars in the chocolate?

I usually use a fork or tongs to carefully dip each bar into the melted chocolate until it's fully coated. Let any excess chocolate drip off before placing them on a parchment-lined tray. Hope this helps
