1. Introduction: What's your story?

Hi there, I am Teresa Carew, founder and owner of On Safari Foods. My passion for wedding catering evolved over time, when the young people whose bar and bat mitzvah's we catered, were getting married. It was so exciting to celebrate with the families and to be a part of yet another major life event along the way. Over the years, On Safari Foods has grown immensely, but we always strive to make every single event of ours memorable and mouthwatering. I believe we offer a unique opportunity for couples to craft a fully customized experience with our team of event planners. Thanks to our focus on global cuisines we are able to cater to almost all of our clients' menu wishes. Chances are, if you can dream it, we can make it happen. At On Safari we are here to help you channel your personality into your menu so that the food at your wedding is authentically delicious, and authentically you.

2. How many weddings have you done in the past?

There are too many weddings to mention, but suffice it to say that we have done all kinds of weddings in all kinds of venues, and under many different circumstances. The only common thread is that the experience we provide is authentic, and comes from the heart and soul. Our food speaks to that authenticity.

3. Do you charge a bulk fee or cost per person? What are your rates like?

We charge a price per head. Everything is broken down, so that the couple can see exactly where their money is going. The event is divided up into food, staffing, rental, decor, and beverage costs. For the quality food that we provide (pasture raised proteins, everything made from scratch, local produce wherever possible), we are quite affordable. We do anything from informal backyard weddings with appetizers, to plated dinners with multiple courses. Because nearly every aspect of your event is customizable, it is hard for us to provide a generalized figure. 4. Do you have a static menu, or can you do a custom menu? And can you take care of various allergy/dietary requests?

We have wedding menus on our web site at www.onsafarifoods.com, but our huge strength is in custom catering. With chefs who have honed their skills making from scratch food from all over the world and locally, we can cater to most clients. A major advantage of cooking from scratch, is that we can control the ingredients, therefore cooking gluten, dairy free, and vegan food, or taking into account any other allergies is quite easy for us to do.

5. What are your most popular dishes?

There are so many popular dishes, and they all depend on who our audience is. During the summer, salmon and beautiful fresh, bountiful salads made from local produce are very popular. An all-time favorite throughout the year is our house smoked pasture raised Prime Rib of Beef, served with a fresh horseradish cream, and our very own jus. Our most popular dishes? So tough, but here are some of them: Our phenomenal Mexican food, South African specialties, and authentic Italian dishes definitely top the list. In addition, a few of our most requested dishes include tequila lime marinated grilled flank steak with a cherry tomato relish, Berber spice rubbed chicken, butternut squash cannelloni, wild salmon with some delicious sauces, eggplant parmigiana, Huli Huli chicken; the list goes on.

6. Do you provide linens, table settings, and accessories? If you don’t provide linens, table settings, etc., will you handle coordinating the rental?

We contract with various rental companies around town to handle linens, table setting, and accessories. Ours is a one stop shop. We will organize your wedding from start to finish.

7. Will food be made on-site or brought in?

Ah.... that is a good question. It all depends: some venues have no kitchen or running water, and we have to make a plan to deliver food at its freshest. If we are asked to serve fish, we like to cook it on site, since it is very delicate. We own ovens that we transport to make this happen. Same with appetizers: some travel well pre-made, and others need to be taken care of on site. We plan our food preparation and production based on the facilities that we work with.

8. Are tastings available and what is involved?

Yes, we offer tastings for up to four guests. The tasting cost $200 and if you decide to use us for your wedding, we will comp the tasting.

9. Who else is in your team and how many people on your staff will be at the wedding?

Pre-covid, we had 5 sales and event planning staff, an events department, and delivery department. We continue to have a team of dedicated and long-term chefs, sales, and serving staff. We typically have a manager at most events, and we hand-pick our onsite staff for every event to make sure it is successful. The number of staff members depends completely on the size and scope of the event.

10. What is your cancellation and/or refund policy?

Pre-covid, you could cancel your wedding 60 days out and get a full refund on your deposit. Now, during these Covid times, we are far more lenient, since we all know and understand what we are dealing with. Rental companies have different guidelines and depending on the cancellation date, you may be responsible for restocking or cancellation fees.

Teresa Carew, Founder & CEO

Almost 30 years ago, South African-born Teresa Carew started a small sausage company she named On Safari Foods in homage to her native country.

Today, On Safari Foods is one of the largest catering companies in the Seattle area with a diverse clientele including individuals, religious organizations, and local corporations. During the pandemic, OSF has been able to pivot its business from in-house corporate and event catering to a line of frozen and fresh foods that are available through their website and virtual event catering with themed boxes and individually packaged meals and appetizers.

Even with an extremely busy schedule, Teresa still enjoys cooking at home for friends, doing yoga, gardening, and spending time in nature with her children and her dog Bingo.

Elizabeth Zipper Operations & Catering Manager

A San Francisco State University graduate with a BA in Journalism, Elizabeth has pursued a career in the hospitality management industry.

After working as part of the management team for several major hotel chains, she found her true passion in the world of food service.

Elizabeth relocated to Seattle in 2010 and joined On Safari Foods. With more than 20 years in the hospitality industry, she brings a wealth of knowledge in catering sales, customer service, and management experience to her role at On Safari Foods.

Throughout her career in food service, Elizabeth has recognized the need to put the customer first and finds creative ways to meet their catering needs. From weddings to Bar Mitzvah’s or planning large corporate events, she ensures that the customers’ needs are met, and has become well versed in specialty menus accommodating a wide variety of dietary needs. She especially enjoys themed and brunch menu planning.

Elizabeth is a cancer survivor and her OSF family has been extremely supportive throughout the ups and downs. When not working, she enjoys reading, a good Netflix binge, random road trips, and visiting her family in California.

Rustling from the nearby brush disrupts our final dinner: a traditional South African braai or barbecue. The table is bathed in candlelight and overflowing with an impressive spread of local foods, a fitting sendoff to a fantastic few days on safari at Cheetah Plains .

I think little of the noise from beyond, as the resort is nestled in the wilds of the Sabi Sand Nature Reserve, so a little animal activity in the bushveld isn't surprising. But a moment later, a fully grown hyena bursts onto the outdoor boma of the Karula Villa. She has somehow managed to circumvent the electric fence, lured by the tempting wafts of our now especially memorable meal. Frankly, the interloper is more alarmed to see us than we are to see her, and she quickly scoots away, tailed by the attentive and experienced staff, determined to make sure she won't make a return visit. 

Our braai concludes without additional disruption and with a special bonus. As a nostalgic dessert sendoff, the culinary team surprises us with s'mores. The attentive game drive staff must have shared our sundowner conversation from earlier when we sipped Amarula (a South African cream liqueur) and mentioned how s'mores would be a fun addition to tonight's sendoff meal.

That attention to detail and focus on guest satisfaction perfectly sums up a day at Cheetah Plains. This property is distinct from other luxe safari offerings, with its trio of private-use villas designed for up to eight guests. Each is equipped with an entire staff for every possible need. Think a sommelier, animal tracker, driver, masseuse, porter, butler, culinary team, and beyond.

Tamsyn Fricker, a Travel + Leisure A-List Top Advisor and Director of Travel Artistry Africa , adds, “Three things help set Cheetah Plains apart from other wonderful luxury experiences in the area: exclusivity, flexibility, and sustainability.” The separate villas allow for private experiences; each villa has its own private game-drive vehicle. In terms of flexibility, the personal villa experience is really about being able to pick and choose your own adventure. The nature of the resort is that everything is bespoke and tailored to you for the ultimate flexibility based on guest preferences. On the sustainability side, “They do move the needle in southern Africa in terms of being carbon negative and with the silent safaris in electric vehicles; they’ve made it a really important part of who they are.”

All this to say, this is the single nicest place I’ve ever stayed in six-plus years of full-time travel writing. Here is my review of Cheetah Plains, South Africa’s loveliest safari resort experience.

  • It’s very family-friendly. Think custom child-approved activities, complimentary babysitting, and chef-inspired kids cuisine. 
  • All the art on the property is by African artists. The famed Goodman Gallery curated the art in the villas. 
  • You can see hippos from your room. Mapogo Villa is set on an active watering hole. 
  • It’s design forward. Cheetah Plains boasts unexpectedly clean, modern architecture distinct from a typical safari lodge.

Cheetah Plains is notably contemporary, a departure from the archetypal lodge look of many safari offerings. Designed by Cape Town-based architecture and interiors firm ARRCC , the property is modernist in feel, embracing raw, natural materials.

“The architecture aspect is powerful and meant to be an unashamedly contemporary take on safari. It lets art and nature really shine. These villas are more about beautiful, crisp, clean design that brings nature in. It’s different from your typical safari lodge,” says Fricker.

It’s also about luxury, with massive soaking tubs overlooking the bushveld, monogrammed pillowcases, automatic blinds, and mosquito nets surrounding the plush bed. The layout of public shared spaces like the kitchen and living room in a central hub, then four private bedroom suites offers the perfect backdrop for a relaxing and indulgent trip. Each villa has a large private pool, an expansive pool deck, and an indoor media room ideal for a cozy movie night. With a boma or patio-like space, there’s room to enjoy the outdoors, too.

Additionally, the three villas (Mapogo, Karula, and Mvula) each have their own sense of personality. Mapogo is a stand-out, with the water feature (watering hole) as the star of the show. “There’s a soothing and powerful sense at Mapogo,” adds Fricker, fitting for its naming inspiration of a coalition of lions. Karula, named for the famed female leopard that roamed this section of the Sabi Sand, means peace. “The sense there is more feminine, with peaceful energy there,” she explains. Mvula, inspired by a former dominant male leopard in the region,  is the yin to Karula’s yang. Fricker shares, “Mvula has more masculine energy, and it’s in the trees with the pool almost hugged by foliage.”

The food and beverage program is unmatched, as the staff tailors meals to each client's preferred schedule and tastes. This approach is such a perk of the private villa model. For especially notable offerings, expect an impressive breakfast spread in the bush, multiple snacks and sundowners (happy hours), and outdoor dinner in the South African braai style.

On my visit, I noticed that the team would prepare my coffee order each morning before the 5 a.m. game drive; true luxury is little touches like this. My other most memorable dining experience was a wine-pairing dinner in the cellar. I truly loved the talented sommelier, Mariska, who hails from the Cape Winelands region. She did a lovely job explaining the South African wine world and choosing inventive pairings for our chef-driven, multi-course dinner. And, of course, we enjoyed some chenin blanc, the most planted grape in the country. The massive wine cellar is stocked with all South African wines, which I also really enjoyed.

The main activity at Cheetah Plains is game drives. Due to the private villa model, each group has access to their own private electric vehicle with a guide and a driver. (The guide team consists of all area locals, too.) It’s customary to do an early morning game drive and an afternoon one, but the team can build the itinerary based on guest preferences. Another great safari-focused activity is a bush walk or a walking safari, a way to see things closer to the ground and enjoy a new perspective.

In terms of art experiences in the bush, Cheetah Plains has partnered with Goodman Gallery to outfit each villa with the work of both established and rising African artists. Visitors can meet with a gallery expert for an art tour of their villa. The property has also just opened a standalone gallery, too. For a sparklier option, there’s even a diamond safari , a custom jewelry offering that is truly incredible. In case you forgot to consult our Ultimate Safari Packing Guide , pop into the property’s boutique, Shari’s , expertly curated by (and named after) Shari van Niekerk. The shop stocks custom items and local contemporary pieces, from scarves that serve as the perfect cherry on top of your safari look, to bespoke jewelry. This upscale spot is a prime stop for souvenir shopping, too. (I was able to scoop up a couple of adorable animal-themed books for my toddler son, as well as a pair of the cutest bush baby stuffed animals.)

An in-room masseuse is available regularly and will bring a table to your suite; facials are also popular. But that’s not all. “I had a client that wanted body scrubs, not something they typically offer, but they made it happen,” says Fricker. Plus, true to the sense of place, Cheetah Plains uses Africology products, a local, eco-friendly, natural, botanical-forward company.

Cheetah Plains is super family-friendly, with inter-connected suites so families can be close but have their own rooms.  Due to the exclusive use villa model, there is no mandatory age for children. Plus, since each bespoke itinerary is designed with the guest in mind, the staff can build custom programming based on the children's ages on the trip.

Kids can get into the kitchen with the chefs to cook and bake, do walking safaris with an animal tracker, go fishing, or enjoy a movie night in the media room, among countless other options. A daily children's hamper, delivered each night, includes pillow treats and safari activities. Perhaps most impressive is the complimentary nanny offered during a stay at Cheetah Plains.

While rooms are not ADA-compliant, Cheetah Plains makes every effort to welcome and accommodate guests with mobility limitations or special needs, including those who travel with a wheelchair. “The villas are by nature easier to navigate as they are primarily one-level, and the doors are wide enough to accommodate a wheelchair,” explains Fricker.

Known as South Africa’s crown jewel, Cheetah Plains sits within the sprawling 160,000 acres of the Sabi Sands Game Reserve, adjacent to Kruger National Park. Fricker of Travel Artistry Africa adds, “The resort is tucked in the northeastern corner of the Sabi Sand , which is world renowned for leopard sightings, big predator movement, and the rest of the Big Five. It’s a true heavy hitter in terms of game viewing — you go to see as much as you can possibly see.” Guests can access Cheetah Plains via charter flights from Johannesburg Airport to the Arathusa Airfield .

As an all-inclusive, ultra-luxe stay, Cheetah Plains isn’t exactly a cost-saving choice for a safari getaway. But, if you fill your villa with a max of eight guests, the nightly rate is lowered significantly compared to six guests in the space. For slight savings, consider seasonality, that is, traveling off-peak season.

“The best value time frames are March 1 through May 31, Sept. 1 through Dec. 10, and Jan. 11 through Feb. 28,” Fricker says. “Cheetah Plains is one of the most inclusive rates you can ever come across in the bush, with an extensive and deep wine menu. It even includes spa treatments.”

There is a slight price difference between the rate leader Mapogo Villa compared to Karula and Amvula, which are a bit cheaper. Rates start at $2,200 per person per day, all-inclusive, based on six adults with a minimum three-night stay and $1,550 per additional guest or $770 per child 12 years of age and under.

Overall, Fricker says, “Cheetah Plains’ has a desire to spotlight the excellence coming out of Africa, as there’s incredible creativity happening there.” From its innovative African-only art gallery to its all-local guide team to its focus on South African wines, Cheetah Plains is the best of the best for a luxurious safari that truly embraces its location.

We are what we eat, although the adage may be more applicable to humanity on a global scale than to the literal individual—a new series narrated by chef René Redzepi, chef at the acclaimed Copenhagen restaurant, Noma . The eight-episode Apple TV+ show tells the stories of eight essential ingredients, from salt to tuna to corn, under the premise that it’s food that truly unites us all. Written and executive produced by Matt Goulding , Omnivore impressively spans the globe, shifting its storytelling from country to country as it attempts to reveal essential truths about what we consume and why.

On the surface, the series seems requisite—an adult take on Michelle Obama’s children’s series Waffles + Mochi , which saw puppets traveling the world to learn about salt, pickles, corn and more. Several of its episodes overlap with Omnivore ’s chosen ingredients, although each addresses them in a very different way. But where Omnivore succeeds is in asking questions about sustainability and global economies. In the premiere episode, which focuses on chiles, the producers head to Serbia to learn about string paprika peppers, which are cultivated by hand by villagers in Donja Lokošnica who are struggling to pass the trade on to the younger generation. In another episode, about salt, we see fleur de sel carefully collected with rakes in Noirmoutier, France. It’s clear that these ingredients exist only thanks to human skill, an impactful idea that threads through Omnivore .

Redzepi’s presence is sometimes essential to the narrative, but other times he’s absent from the filming, existing only a voiceover. The chile episode, which sets the tone for the series, is framed by Noma, ending with a staged service at the Copenhagen restaurant where everyone, including the staff, chow down on extremely spicy chiles, but otherwise Redzepi is not part of the episode’s segments, shot in Serbia, Thailand and Louisiana. He shows up elsewhere, eating sushi in Tokyo or looking wistfully into a field as he opines about corn, and he occasionally brings the camera into the kitchen with him as he showcases Noma’s famous preserved ingredients. The writing itself is poetic and existential, although it is also imbued with essential facts and figures. It sometimes veers into the overwrought, but Goulding manages to make each episode informative, even for those who regularly consume food TV shows and have heard and seen some of this before. 

As the title implies, Omnivore doesn’t take a stance on plant-based eating versus indulging in animal products (as some critics and viewers assumed before the show’s debut). It acknowledges that cultures around the world eat differently and we can learn from each other. There’s an entire episode about pigs, where Redzepi wonders what the animal might ask humans, who have transformed a wild beast into a beloved ingredient. In the tuna episode, there is discussion about overfishing and how the tuna industry has changed in the last decade as less fish become available in the sea. There’s no didactic message embedded in these episodic glimpses, only questions worth asking and pondering. It doesn’t make you want to eat tuna any less—in fact you may want sushi immediately after seeing a Japanese chef butcher a giant tuna. 

Omnivore is not a series about Noma, or even really about Redzepi. While he does share personal anecdotes about the ingredients and about his approach to food, the core of each of the eight episodes is the people around the world who cultivate, farm and produce each item. This approach may throw viewers off, particularly as the promotional material features Redzepi illuminated like some sort of culinary food deity. But it’s an approach that feels truer to the thematic scope of the series, which emphasizes the unifying connective tissue food generates rather than the innovation of an individual. The show comes to a close with corn, an episode that is more politically-tinged than some of the others as Redzepi describes the tension between Mexico and America as competing producers of the vegetable. He recounts a food memory of his own, reminding the viewer that what we eat is a window into the lives of those who made it. It’s a poignant thought and one that resonates throughout Omnivore , a show that ultimately contends that what we eat is what we will become.

Some of my travel fun moments at Shamba were truly memorable. We love animals, and most of our trips are to visit animals. it only costs $10 to enter! Can you believe it? A full bucket of food for anime is $10 You will definitely love this place and share in so much laughter, joy, and maybe even a bit of screaming.

We had a blast cruising (very slowly) through this small Safari park in WI. The animals were very willing to eat from your hand, scooper provided, or just from the bucket. The animals were very friendly but some camels are more "hungry" than others. I was surprised when a camel shoved his head into my car to reach the food from my bucket. We laughed, the camel made a mess, and we moved on! The cost is pretty expensive ($10 person) but you can go through the park as many times as you'd like. You have to stay in your car during the gated Safari but you can get out and feed the giraffes at the end. The animals are beautiful, happy and well taken care off. There are Porta Potties available but no other bathrooms. I don't suggest having a dog in the car with you unless they are not bothered by other animals and won't bark at a camel coming through your window! Be prepared to vacuum out you car when you are done. Food is $10 a bucket and it will get everywhere!! Highly recommend if you love animals and don't mind a little camel slobber!

‘omnivore’ review: noma’s rené redzepi hosts an apple tv+ food docuseries that’s as thought-provoking as it is hunger-inducing.

Omnivore

In the final minutes of Omnivore , narrator René Redzepi reiterates the thesis of the whole thing. “Not every bite is a revelation,” says the Noma chef, “but every bite can be a small vote for the kind of world we want to live in.”

Unlike most “foodie” shows, Omnivore focuses not on acclaimed restaurants, hallowed culinary traditions, or elaborate dishes, but on core staples like corn or coffee. If its subjects seem basic, however, its ambitions are lofty. Each of these becomes a starting point at which to consider the histories and cultures they reflect, the values that have shaped their path around the world, the specific individuals who ferment your Tabasco sauce or advocate for more diverse bananas.

Occasionally, it overextends itself. Redzepi’s metaphors about the “human recipe” can tend toward preciousness, and some of the supposedly slice-of-life scenes have the awkward, stilted quality of a PSA. Maybe the Indian farmer’s daughter really did want to ask her dad about his work collecting, preserving and spreading traditional varieties of rice, but the ensuing conversation sure sounds like one scripted so that Omnivore might pontificate on the importance of building a better future for our children.

More often, however, the only complaint to be made about an episode of Omnivore is really a compliment: The eight 40ish-minute episodes fly by so fast, touching on so many different intriguing ideas along the way, that each one left me hungry for further exploration.

Through all these explorations, a few common themes emerge. The most obvious is the sheer delight the series takes in food. The camera lavishes a loving attention to detail on every ingredient or dish it encounters, whether it’s a mountain of snowy fleur de sel or a country fair corn cob dripping with butter. The finest artisans, meanwhile, are framed like heroes, backlit in an almost saintly glow while they ever so carefully carve into a hunk of tuna or sprinkle salt over cabbage to make kimchi.

Another through line is a reverence for the old ways and, concurrently, a fear that they might become lost in a world that prioritizes convenience over craftsmanship and quantity over quality. In interview after interview, proprietors of family businesses express their worry that the practices they’ve worked so hard to preserve might nevertheless die out with the next generations, lured away by flashier, more lucrative or less backbreaking careers.

Meanwhile, even as Omnivore suggests that the brightest future for agriculture might be one that combines centuries of traditional knowledge with cutting-edge technology, its storytelling exhibits a healthy skepticism of the latter. It might mention in passing the scientists breeding new strains of rice that might be grown in oceans or deserts, but it’ll also wonder if the Green Revolution of the 1960s did not create more problems than it solved.

If it’s not the most pointed approach, it’s certainly the more inviting one. To watch Omnivore is to get a better understanding of how much of your grocery list depends on the regularity of the monsoons in India, the containment of a deadly fungus in Colombia, the ancient know-how of pepper pickers in Serbia. It is to reflect upon how many centuries of innovation (and oppression) went into designing the banana you had this morning, how many hands have gone into the labor of turning a berry from the hills of Africa into the perfect cup of coffee. Maybe its lessons will help shape a better tomorrow, or maybe they won’t. But here and now, the show makes a persuasive case that every morsel of food is nothing short of a minor miracle.
