We also understand that working at sea can be a challenging new opportunity. Here are answers to some essential questions you might have when considering cruise ship employment.

How do i get a medical certificate, which ship will i be assigned to, how do i get to and from the ship i am assigned to, do i need travel insurance, how long will i be onboard, can i get off and go home during the contract, will i have my own room, what is the power voltage in my cabin, can i drink alcohol onboard, is there a drug policy, is there a curfew, can i bring a family member or friend onboard, will i have access to guest areas and amenities during my time off, once onboard, how do i stay in touch with my friends and family back home, can i have mail delivered to the ship, is there an atm onboard to use, will i have to pay taxes, can i send money home from onboard, how do i pay for items onboard, how do i do laundry, what if i miss the ship in port, what happens if i get sick while working onboard, can i visit the ports while working onboard, how do i apply to work onboard, what are the requirements for onboard employment.

While specific position requirements depend on the job you are interested in, there are some essential requirements that all crew must meet to work onboard:

  • Be 21 years of age or older
  • Be able to pass a criminal background check
  • Hold a valid passport
  • Have a US C1/D visa (if you are not a Canadian or US citizen/resident)
  • Have a Princess-specific pre-employment medical exam certificate
  • Meet the English fluency requirements relevant to your position

Also known as a seaman's visa, some nationalities need this to work onboard a ship and travel to certain countries. This visa normally lasts between two and five years. You will be required to make an appointment at your nearest US Embassy to gain this visa; all paperwork for the appointment will be supplied by your manning agency.

This extensive examination is at the employee's expense and can be conducted through one of Princess's recommended medical facilities—you'll be advised which one is closest to you. Once this is completed and approved by our corporate Medical department, you are cleared to travel and work onboard.

Shipboard employees are scheduled to vessels based on operational need. This means you could be assigned to any one of our vessels in the fleet depending on where a position is open at the time you are travel-ready. After your first assignment, we will be able to provide details about the next assignment after your leave period.

At the beginning of each contract Princess Cruises will provide flights from your designated airport to your assigned ship. At the completion of your contract, Princess will arrange for your travel back home as well. It is your responsibility to get to the airport from your home, but from there we will provide any necessary accommodations and/or transportation to and from the ship.

While you are covered medically in Los Angeles and onboard the vessel, we suggest you purchase basic travel insurance to cover the cost of lost luggage or injuries that could result from shoreside activities.

Contract lengths vary by position but range between four and ten months. After each contract you will receive approximately 60 days of vacation before your next assignment. Your daily work schedule while onboard will depend on your particular position, but you can expect to work seven days a week and anywhere between 10-13 hours per day.

Time off during the contract is not permitted. In case of family emergencies, Princess Cruises does understand that additional time at home may be needed and does accommodate these requests on a case-by-case basis.

Accommodations vary depending on the ship and position. Those in non-management positions generally share a cabin with one to three other roommates whereas those in most management positions are entitled to a single cabin. Cabins include a storage space, TV, and DVD player.

All vessels have 120v US power and some vessels also have 220v European power.

Yes, alcohol is available for purchase during time off. However, Princess Cruises has a strict alcohol limit and at no time can a crew member be intoxicated.

Princess has a zero-tolerance drug policy. All crew are subject to random and reasonable-suspicion drug testing. Violation of these policies will result in termination.

There is no set curfew. However, crew who are out late should be respectful of other crew members and guests nearby.

Crew members who meet specific length-of-service criteria have the option of requesting "relatives travel," a benefit that allows family members to sail onboard for a limited period of time. Some restrictions may apply.

While some officer-level positions do allow restricted access to guest areas, most facilities are for guests only. However, we have a variety of crew-only facilities, such as a crew pool, whirlpool, gym, bar, and  Crew Club, which is a communal room where you can gather to watch movies, play games, sing karaoke, and much more!

Postal mail services are available while onboard. You will also have access to computers in the crew training areas. Wi-fi Internet is also available in the crew areas if you choose to bring your own laptop or tablet. Princess offers discounted rates for phone and Internet cards so you can stay in touch with those at home. But remember that satellite capabilities are sometimes limited while the ship is at sea.

You will be provided with mailing addresses for ports where mail can best be delivered.

There is an ATM in the guest areas; an ATM charge will apply. You can also cash checks in the Crew Office onboard to get cash.

US citizens will have federal taxes automatically deducted and may be required to pay state taxes, if applicable. All other nationalities are responsible for filing their own tax forms upon returning to their home countries (as they are self-employed).

You can wire money via the Crew Purser's office. Details are available onboard and rates may vary.

You will be provided with a bar account number, which is your personal number for the duration of your contract onboard each ship. As the entire vessel is cashless, even for guests, you will provide your account number at the bars, salon, and shops in guest areas. In the Crew Bar you can purchase a CrewCard and add money onto it for purchases. At the end of every month you will be required to settle your account.

There are crew laundry facilities where the washers and dryers are free of charge—you just provide the soap. You can also use the dry cleaning onboard, but there is a nominal cost.

Crew members who miss the ship should contact the ship's Agent who will be at the port (the address and phone number are always in the Princess Patter, a daily newsletter for our guests). The Port Agent will arrange transportation to the ship's next port of call. However, it is the responsibility of crew to pay these transportation costs. Crew may be disciplined for the offense and could be terminated. Depending on the port all crew members are required to be back onboard half an hour to an hour prior to sailing time.

While onboard, all crew are medically covered and can visit the Medical Clinic for health concerns. If you need to be medically disembarked during your contract, Princess will provide transportation to a land-based medical facility and repatriate you back home.

If you are not scheduled to work during the time the ship is in port, you can disembark the ship with your supervisor’s approval. Occasionally, there are crew-specific activities or tours to participate in.

Safety requirements dictate that a certain number of crew members be present on each vessel at all times. As such, there may occasionally be times when, although not scheduled to work, you will be required to remain onboard while the ship is in port.

Minimum Age to Work on Cruise Ships

Although the most cruise lines and agencies will tell their applicants that the minimum age to work on board ships is 21, there are crew members that have been able to get hired at the age of 18, 19, and 20. For the most part it depends on which department that you will work for. But, for positions within the food and beverage department and within the casino department, the minimum age is definitely 21. This is mainly due to the minimum age to serve alcoholic drinks and to gamble. It has been know that cruise lines make exceptions for some applicants in select departments based on maturity. For example, the Princess Cruises employment website states that applicants that apply to be production cast members (dancers/singers): “…We do sometimes accept 18 year olds if they show maturity and responsibility.”

Maximum Age for Cruise Employment

Good news for the young at heart, there is no maximum age to work on cruise ships. Unfortunately, the truth is that there are some jobs on board for which applicants over the age of 35 would not be considered. The main concern for the employer is that the job-seeker is fit, both physically and medically. The other concern is would the applicant fit into a team of mostly younger crew members. Applicants need to consider that the days can be long (11+ hours) and there are no days off. Some jobs you are on your feet all day.   • Must have working knowledge of the service requirements/styles/food for all meal periods (breakfast, lunch and dinner) across various restaurant concepts (Italian, French, Casual-fare, Oriental, Steakhouse, Brazilian Steakhouse, etc.)

QUALIFICATIONS/ EDUCATION

  • Minimum two-year experience as a front waiter with fine dining and banquet service experience in any of the following settings: 3 Star – 4 Star land-based hotel/resort; free-standing restaurant with at least 180 seats; or previous shipboard experience in a similar position is required.
  • Minimum one year experience selling and serving wine and other beverage products is required.
  • Intermediate to Advanced level English verbal and writing skills, including the proper use of English grammar is required.
  • Associates Degree, Secondary Education Degree or foreign equivalency is required.
  • Certificate of completion in safety, environmental, public health and sanitation regulations and procedures from a recognized institution is required.

How Much Time Off Do I Get?

The average contract of a cruise ship employee is going to last between six and eight months, with a six to eight weeks vacation. When you’re a member of the waitstaff on a cruise ship, you’re going to be working a lot. You will be working a lot of hours and expect to have little time off.  Normally, waiters and assistant waiters work breakfast, lunch, and dinner services, with a few hours off in between. There will be times when you will be working only breakfast or lunch service, having some time off to explore the ports, but you are always expected to work dinner service.

Don’t hesitate during these questions because f they sense that you will be the type of crew that won’t be able to handle these aspects of ship life, even if you have all great qualifications, they might not offer you the job. 

The recruiter wants to know if you will adapt to ship life, which is very different from a job on land. You live where you work and you work where you live.

Divina Waterslide age/height requirements?

Does anybody have first hand knowledge about the age/height requirements for the waterslide aboard the Divina? I've done some research and have found conflicting information. If anyone can categorically confirm (or deny) the information, it will be greatly appreciated. [emoji3]

From what I've read, the minimum age is 9, but other posts say that younger kids are allowed as long as they are 120cm/48 inches tall to ride. Some posts say that they will measure you and enforce the height requirements, others say that as long as you sign the waiver of liability, they'll allow smaller kids.

I have a 48 inch tall 6 year old. I'm beyond confident that he can handle the waterslide on the Divina. He's been going to major water parks and going down considerably taller and faster water slides since he was 4, he's an excellent swimmer, and also started surfing since last summer tackling some pretty big waves for his age.

Being unable to use the waterslide on the Divina will be a bit of a head scratcher and we'll respect whatever the rules are, but I would like to let him know in advance so that there are no surprises when we get onboard.

We were on the Divina in Nov 2015 with an 8 year old with no issues. They have a height measure where you get your wrist bands. I cant remember what the height requirements were, but 48" sound about right. They only went down it once since you had to push yourself through. Not a very well engineered slide.

They just have changed the rules when we went in September 2014 you had to be 9 and it wasn't about height

I messaged MSC through their Facebook page and they just replied stating that the official requirement is either 8 years of age OR a height of 47 inches.

Just thought you should know that slide on the Divina does not empty out into a pool it ends up on deck so swimming not a concern
Thank you cruisin deb! [emoji3] That's one of the reasons why I started questioning the requirement. On other ships that we've sailed on that have slides that don't empty into a pool, similar to the Divina, the requirement is 42 inches, not 47 inches like I was informed. I am confident that my son can handle it, but I'll respect the rules when we sail. Hopefully he'll grow a few more inches between now and the summer.

Can you tell me how it went on the Divina? Did your son go on the water slide? My daughter is also never scared, and she loves water slides...but she is almost 6 (and almost 47 inches)

Here’s the screenshot from MSC USA’s reply stating that it’s 8 years old or 47 inches tall. Rules may have changed since then, but that’s what I showed the staff onboard the ship.

I don’t see the post that i wrote before the screen shot, but I’ll try to rewrite what I originally posted:

Basically it was a mess. On the first day we proceeded to the waterslide where they did have the measuring sign. The waterslide attendant measured my son and he did meet the height requirement. But then the attendant said that he couldn’t ride because he didn’t meet the AGE requirement.

I told him that I had contacted MSC USA via their FB page and that I had received written confirmation that he only had to meet one requirement OR the other. The attendant told me to talk to the head of the children’s program and if she approved, then he would be allowed to ride.

The next day I checked with this person (a very nice lady from the Dominican Republic). She read the message that I had received and said that it wouldn’t be a problem. She then told me to go back to the waterslide at a predetermined time when she would be present and she would make sure that I was allowed to sign the waiver so that he could ride.

We went back at that predetermined time, but she wasn’t there. A different attendant was present and I decided to try again anyway. He measured my son but didn’t ask about his age. He just handed over the waiver and gave my son a wristband. I still don’t know if he did this because he’d already been briefed about my conversation, or simply because he didn’t follow proper protocol. But long story short, my son was allowed to ride.

With all of that said, the water slide was fun, (I rode it a couple of times myself) but nothing special. It was like something you’d find at a resort pool. My son lost interest after a few times down the slide and then moved on to other activities throughout the ship.

If there’s one thing that I learned from this experience is that there’s no consistency with the rules, and things vary drastically depending on who is enforcing them. Every time we walked by, the scene was different. Sometimes the attendant would be enforcing strict rules and keeping everything orderly, while other times, it would be a free for all, with kids running up and down the stairs and gown down the waterslide in a chain while the attendant looked away.

Cruise Ship Size Comparison, Dimensions - CruiseMapper

Length of a cruise ship (Length Overall / LOA)

The cruise ship length is professionally referred to as LOA (length overall), meaning the maximum length between the two most distant points on its hull. LOA may also include the tip of the bowsprit - the pole extending from the ship's prow (usually on tall sailing ships, yachts, and smaller boats). The bowsprit is the "winning" part of the ship when competing in a race or during trials/speed tests.

Another passenger cruise ship length measuring (though not included in this survey) is called LWL. LWL signifies "loaded waterline length" (or just "waterline length"). It excludes the total length, denoting only the length at the point where the vessel sits in the water. The LWL measure plays an important role when assessing some ship properties, like "hull speed" (aka "displacement speed"), water displacement, the amount of paint needed for the ship's bottom, etc.

Longest cruise ship in the world

The longest cruise ships by size also occupy the first two positions in the list of the largest cruise ships of the world by passenger capacity and gross tonnage. The humongous Royal Caribbean's floating cities Allure and Oasis boast the whole 360 meters in length (1,181 ft), and breadth of 47 meters (154 ft), the unbelievable for a passenger cruise ship tonnage of 225,300 tons, and max crew-passenger capacity of almost 8,500 (2,170+6,300) - each!

Weight of a cruise ship (tonnage) and draft

The size (tonnage weight) of a cruise ship is measured in "gross tonnage" (GT). It relates to the vessel's internal volume (keel to funnel* and to the outside of the hull) and applying a mathematical formula. The cruise ship tonnage is generally used for determining registration fees, port fees, safety rules, regulations. Another ship data (though not included in this survey) is the vessel's "deadweight tonnage" (DWT), which is the weight a vessel can safely carry (cargo, passengers, etc).

The cruise ship draft (or draught) measures the number of meters/feet from the waterline to the lowest point of the keel - or the ship's "invisible" portion below the surface (and especially when loaded). The cruise ship's draft is very important when considering docking in a particular port, sailing through channels or the inland waterways of the continents (rivers and canals).

*Note: Actually, the ship's funnel is the only part of the enclosed interior space that is NOT included in its Gross Tonnage measurement.

As one of our fans Mr John Spooner (cruiser / Retired Master Mariner) have pointed out, the "Gross Tonnage" weight is a measurement of VOLUME, and not of MASS. GT  is an index related to marine vessels' overall internal volume. According to Wikipedia's definition:

  • "Gross Tonnage" (GT) calculations are based on the volume of all the ship's enclosed spaces.
  • "Gross Register Tonnage" (GRT) is the vessel's total internal volume measured in "register tons" (each ton equals 100 ft3 / 2,83 m3).
  • Neither GT nor GTR measures the vessel's displacement (mass), but really show how big cruise ships are.
  • "Deadweight Tonnage" (DWT) measures how much weight a cruise ship (or any of the marine vessel types) can carry safely. This a weighted sum of the vessel's cargo (incl provisions, passengers, crew), fuel, water (fresh and ballast), etc.
  • "Displacement Tonnage" is how much weight the water that a cruise ship (any vessel) displaces when floating (the total weight of the ship / including its contents). Displacement is usually applied to the navy rather than commercial marine vessels. It is measured when the ship is loaded at full capacity.

It focuses on the requirements necessary to pursue this new career path, as narrated by a former call center agent who decided to live his dreams.

Working on a cruise ship is an exciting career path. It may be a tough profession due to the number of hours you have to put in work, and the fact that you are away from home most of the time doesn’t make it any easier. Having said that, one of the many perks includes the chance to visit different places all over the world. If you are interested in learning how to be a cruise ship worker, then read on.

How to Work as a Sea Farer

The information presented in this video is shared to us by Bam’s Travel Channel, a YouTube channel owned by a Filipino cruise ship worker. Bam specifically made this video for those who wish to shift careers; for example from being a call center agent to being a sea farer. The vlogger mentioned that he worked for 5 years as a customer service consultant. He worked for the following corporations: Teleperformance, VXI Makati, IBM Concentrix, etc.

After working for 5 years in the same industry, he decided to try a new career. That is, he wanted to be in a cruise ship industry. Primarily, he wants to be able to travel the world.

He has always dreamed of travelling to different countries across various continents. Unfortunately, he said that his salary is not enough to fulfill this dream.

As a result, he strongly felt that his only way of achieving this dream is by working in the cruise ship industry.

Moreover, he was inspired to try out this industry because of his social media friend. That friend kept on posting travel pictures on social media. He was awe inspired by the fact that in one day, his friend was showing photos of him being in Spain, then for the next two days being in France and then in Italy.

His friend, who was a cruise ship worker enjoying travel perks, inspired him to try the same.

Working as a Cruise Ship Worker without Experience

The vlogger said that he had no experience working in a hotel or a restaurant, let alone working in a cruise ship. However, this did not discourage him from trying. The question is, can you still work at a cruise ship even if you don’t have the necessary experience?

The answer to that question is yes. There are two ways to qualify as a cruise ship worker, and these are the following:

  • 1-2 Years of hotel or restaurant work experience
  • Several months of cruise ship work training.

The vlogger was not qualified for the first entry, and he figured that if worked for 1-2 years at a hotel or restaurant, this would take too much time. That’s why he looked for another way to qualify.

Training at Micha

The vlogger said that he found another option to qualify for work at a cruise ship, and that is to train at MICHA, or the Magsaysay Center for Hospitality and Culinary Arts. He trained there back in 2014 for around for months.

In particular, he trained to be skilled at handling food and beverage. He took this option to just train, instead of working for 2 years. This is less time consuming, but at the same time he admitted that getting 1-2 years of real restaurant work experience is actually really good as well.

He trained at MICHA Manila from May to September of 2014. After the training, he and his classmates were fortunate enough to have been given an instant opportunity; there was a mass hiring in Magsaysay, and he was one of several students who were immediately endorsed for an interview.

During this phase, he was interviewed, made to take an exam, and he passed everything. The next step is to process all documents and requirements needed to work at a cruise ship.

Preparing requirements can be quite consuming in terms of time, energy, and resources, but if you have a goal, then no challenge is too hard. In fact, the vlogger said that you should take the whole process of processing requirements as an investment for the future.

So what are the requirements you need in order to begin the application phase of working at a cruise ship? Here they are:

  • Passport – the first thing you need to do is apply online, at the DFA website. The regular price for getting a passport is 950 pesos, while the expedite price is 1,200 pesos. With regular, expect to receive your passport in 21 working days. With expedite, you get it in just a week.
  • NBI Clearance
  • Bank Account
  • High school diploma plus transcript , or college diploma plus transcript

What are the requirements for getting a passport? Here they are according to the DFA website :

  • Confirmed online appointment
  • Personal appearance
  • Accomplished Application form
  • Original and photocopy of PSA Authenticated Birth Certificate on Security Paper
  • Any of the following acceptable IDs with one photocopy: List of Acceptable IDs

If you are employed with another job while applying to be a sea farer, then you won’t have trouble preparing most of the documents mentioned above. You will only have to prepare your NBI clearance, TIN number, or even bank account if you don’t have one already.

So which bank should you create an account in? Well, it depends on your agency Some agencies require you to create a BDO bank account, for example. In particular, they would want you to have a Kabayan bank account. For this type of account, the maintaining is so cheap; probably around 50 to 100 pesos.

For the high school or college diploma plus high school or college transcript, you need to have these apostilled. Essentially, the DFA needs to know that your transcripts are certified true copies.

To do this, you should go to the school where you graduated and tell them about your application process. They will know what to do. If you choose to submit a high school diploma and high school transcript, you will most likely go to the DepEd division office (that is, if you graduated in a DepEd school). They will then give you a date when you can get your certified diploma.

SOLAS Training

At the MICHA, or other similar institution, you will be undergoing a SOLAS training for around 8 to 10 days. SOLAS stands for Safety of Life at Sea, and this includes basic training on swimming skills, fire training, and more.

How much will you spend on this training? Well, it depends on the institution, but you will probably spend around 8,000 pesos. After the SOLAS Training, you will get a SOLAS certificate.

If you want to train at MICHA Manila, then all you have to go to the Times Plaza building located in front of the UN Avenue LRT situation. Bring your ID and inquire about the SOLAS training.

Seaman’s book

To get the seaman’s book, you need the following requirements:

  • High School or College Diploma or Transcript
  • SOLAS Certificate
  • PSA Authenticated Birth Certificate
  • 2 Passport-Sized 2×2 pictures with colored or white background

Getting a seaman’s book is a lot like getting a passport. You need an appointment. The price is 1,500 pesos for expedite, and 300 pesos for regular.

To pay for your seaman’s book, all you have to do is go to the nearest bayad center. There are bayad centers in SM and in most 7-11 outlets, among others.

Other Possible Requirements

Other requirements include:

  • Yellow paper vaccination
  • Medical exam

These are already required when you are hired. The requirements mentioned in previous sections are for the application process.

Having said that, you can always get these documents if you want even before you are hired. That’s what some aspiring sea farers do, and that gives them the advantage of being ready for immediate hire once something of the like comes up.

Working at a Cruise ship

After submitting all requirements and passing all interviews, you may have to wait for a few more months before you can join a ship. The vlogger mentioned that his first ship is from P & O cruises.

His first few days were really rough. In fact, after 3 days he got really sick and almost gave up. He was so sick that he had to be isolated in the clinic for several days due to high fever and body pains.

He attributes this sickness to the fact that he isn’t used to the physical and long hours of work required in the industry. As a call center agent previously, he only had to sit and relax for 8 hours on the job, so this was definitely new for him.

He said that has a cruise ship worker you have to work for around 10-14 hours. He was so overwhelmed that he decided to call his mom and said he wanted to quit. However, he decided to stay for one more week and see if things get better.

Things did get better for him, and now he is a full-fledged cruise ship worker with tons of experience.

Advice for First Timers

The vlogger gives the following advice to those who will be joining the sea faring industry for the first time:

  • Stay Physically fit – you need to be strong. For example, if you work at a restaurant in a ship, chances you will be working with one other person (a waiter, or assistant waiter), and will be serving around 5-7 tables with 5 guests per table. You need the endurance to do serve them all.
  • Take care of your mental health – when your boss gets mad at you, just think that they are giving you constructive criticism. Stop thinking about your family too much; just focus on your work.
  • Be emotionally ready – you will be dealing with people across different nationalities. The environment will be quite different from what you’re used to. You may have a boss that is too strict or shouts at you. Keep your emotions in check.
  • Trust God – you have to pray all the time, especially if you feel alone. This will help you overcome challenges.
  • Be friendly with your boss, supervisor or manager. – at the end of the day, they will be your first hand in terms of guidance and telling you how to do things right.
  • Be friendly with your workmates – as a beginner, there is a learning curve that you need to tackle, and your more experienced work mates can help you speed up the learning process. They are there to help you perform your job well.
  • Cabin Mate – you will most likely be staying with one other worker in a single cabin. You’ll be together for hours after work. Chances are you will be talking with that person. Don’t try to pick a fight with your cabin mate. Otherwise, you will only be putting yourself in a stressful situation. If you can’t handle your cabin mate then you can just request to be transferred.

There you have it. These are the steps needed in order to apply to become a cruise ship worker. The vlogger even shared tips on how to survive during your first few days, weeks or months onboard.

USPH Guidelines Preparation for Standard Port Health Inspection

Guidelines to prepare the vessel, vessel sanitation preparation list .

This document is a guideline to prepare the vessel for a P.H. inspection.

Pre-inspect three days before arrival in port.

Prepare a repair list if necessary for the staff Captain or Chief Engineer.

Conduct a department Head Meeting to discuss the results of the pre-inspection in the following areas:

Food handling

Cleanliness of departments, personal hygiene.

  • Ensure that all refrigerators have thermometers.
  • Ensure that there are no cleaning supplies in any department (except three step bucket system). This includes:
  • Brooms, Mops and Deck Brushes
  • Insecticide Sprays
  • Ensure that there are no wooden utensils in use.
  • Ensure that there is evidence in all Departments of utilization of the three bucket system.
  • Ensure that there is one crew member stand by for each department.
  • Ensure that all ready to eat items on the line have individual serving utensils.
  • Ensure that no on duty crew member has rags in their trousers or utensils such as knives in their pockets.
  • Ensure that no one opens the storeroom refrigerator. It is therefore recommended that the Food Manager keep the storeroom refrigerator key until the P.H. inspection is completed.
  • Ensure that the approved sanitation menu for lunch is prepared the night before. Not cooked, only prepared.
  • Ready to be cooked food is only to be moved from the refrigerator to the stove. It is not to be left out at room temperature.
  • All drains are to be clear of food particles, and there is to be no water deposit.
  • All air condition vents must be free of dust accumulation
  • Check all exhaust filters in galley and also check for dripping grease from deck head.
  • Ensure that refrigerator covers are clean.
  • Check that no condensation is inside refrigerators.
  • Ensure that refrigerator cover fans are clear of dust and rust.
  • All personnel must have clean uniforms, aprons, hat and gloves. Further, they must maintain their personal hygiene.
  • Ensure that all light fixtures are in satisfactory condition.
  • Ensure that maximum lighting is exposed.
  • A list of authorized personnel must be posted, and only those on the list are to report for duties, until the inspection is completed.
  • Ensure that there is evidence clean and sanitized working utensils in each section.
  • Keep the least amount possible of cooked food in the cooked food refrigerator.
  • Ensure that there are enough pallets in all stations to ensure that nothing goes on deck.
  • Especially the outside refrigerator in the storeroom.
  • If there is an elevator, ensure that it is clean inside and is lifted to clean the bottom.
  • No Lexan boxes are to be marked with markers.
  • Ensure that all pots and pans in the pot washer are properly cleaned and sanitized; also ensure that there is a separation between clean and soiled.
  • Cutting boards must be clean and sanitized. Never have all new cutting boards out for an inspection.
  • Breakfast skillets must be in clean condition and after service are to go directly to the pot wash soil section.
  • Ensure that only 4” and 6” Lexan boxes are utilized to keep food or sauces in refrigerators.
  • All port holes must have fitting screen or kept closed.
  • Bulk milk dispenser has to be served from bulk or in original container or refrigerated ½ pints.
  • Ensure that there is no evidence of oven gloves in pastry or bakery shop.
  • Cooks are not permitted to wear any sort of jewellery. The only exception is the cook doing poached eggs who is authorized to wear a watch.
  • Ice blocks for decoration purposes must be isolated from food in deep freezer and on a pallet, a sign “Non potable Water” must be posted.
  • All food handlers must know food temperature and their danger zone of 45° F to 140° F, and the three step systems and how to use it.
  • A utility cleaner must be on standby in the breakfast line to pick up any soiled dishes or pans in the line. This will allow the breakfast cooks to only touch clean items and ready to serve food.
  • All meats in the thawing room must be in clean containers a din separation. Example: Beef Veal Lamb Chicken, Fish and seafood are to be kept on different shelves.
  • Nothing is to be in the thawing room in carton boxes or in their original box.
  • Raw food and cooked food must be separated.
  • All containers must have dates (Please do not use masking tape).
  • All garbage cans must have leads.
  • Clear paint from S/S surfaces.
  • No utensils such as knives, ladles, etc. should be kept in Chefs Office or F&B Manager’s office, as well as liquors or anything used in food preparation.
  • Ensure that there are no working utensils in buckets.
  • All crew members must know about the three sink system and their temperature. (Water temperature 110F).
  • Bakery shop must be ready to be inspected by 06:00 AM.
  • No breakfast preparation is to be done after 06:30 AM. (Recommendation).
  • Check pot wash area before arrival.
  • Ensure that all boxes are closed in dry storeroom and all #10 cans and labels are straight.
  • Ensure that pastry carts and baker carts are clean (especially the wheels).
  • No blood is to be visible on or around items in the thawing room.
  • We recommend a cabin inspection to ensure that crew accommodation is free of working utensils etc.
  • Flour bin in baker shop must be clean and dry. Check the handle of the bin.
  • All plastic and aluminium foil must be in original boxes.
  • Avoid breakfast for waiters and busboys on sanitation day.
  • Fire extinguishers must be clean.
  • Remove pots and pans and trays without handles.
  • Ice machines must be clean; they must have S/S scoops and a chain 6” from the deck.
  • Check the Maître d’hôtel cabinet.
  • No flambé cart.
  • Ensure that the butter in the Dining Room is iced down. 

SANITATION INSPECTION GUIDELINES

Personnel involved in food storing, preparation or service.

  • Good Hygiene practiced: Uniforms clean, bath frequently, failing to cover their face when sneezing or coughing, wash hands often etc.
  • Free: of infections and communication deceases.
