Bar Utility / Bar Back Job Description and Duties:

Cruise ship bar utility

- Reports to the Bartenders and the Head Bartender

- Responsible for assisting the bartenders in maintaining and keeping the bar, lounge, pantry areas, all glassware and equipment clean and properly organized

- Responsible for re-stocking of bar items and for collecting and transporting supplies (beverage products, dry snacks, glassware etc.) from the ship's storage area to the various beverage outlets around the cruise ship as well as for transporting ice in appropriate containers for the bartenders and bar servers

- Constantly monitors the quantity of glassware and ice in the assigned beverage outlet and ensures that there is always a sufficient supply of them

- The Bar Utility is in charge of the glass washing machine and would place all glassware in the proper racks as well as making sure that soap and rinse-aid for the glass washing machine are well stocked

- Monitors the supply of glassware and to re-stock when necessary

- Keeps the dry snacks refilled and the ice bins replenished on regular basis

- Follows the cruse line guidelines regarding uniforms and personal hygiene and ensures that cleaning and sanitizing of the assigned bar, lounge and pantry area is always up to the standards of the cruise line and according to the USPH and/or UKPH regulations

- He/ she would participate in courses, meetings and training programs, would observe how the bartenders prepare the drinks and would try to learn all about the bar operation in order to develop the necessary skills needed for promotion to superior level position(s)

Bar Utility / Bar Back Job Requirements:

This is an entry level position

Previous bar related experience is preferred but not mandatory

Adequate Knowledge of proper cleaning techniques and use of cleaning equipment is required

The candidates must posses good interpersonal skills, positive attitude and willingness to learn as well as be customer service focused and eager to work in a high-volume, fast-paced guest service environment

High school diploma or basic education equivalent is preferred, but not mandatory

Basic command of the English language is required, knowledge of additional languages is a plus

Most candidates apply for Bar Utility jobs in order to "set a foot" in the cruise line system and then climb up their way to better paying position through internal promotion

Bar Utility / Bar Back Salary Range:

$1200-1600 U.S. per month depending the cruise line, size of ship and cut of gratuities (tips). Strong possibilities for promotion from Bar Utility to Bar Server or Bartender position.

Cruise Ship Job Positions – Food & Beverage Jobs

The Food and Beverage department is the largest department on a cruise ship since it has the most crew and officers working in it. Because of its size, the Food and Beverage department is broken into a few different categories depending on the cruise line.

For example, Carnival Cruise Lines separates the department into Food and Beverage Management, Culinary Arts, Bar Guest Services, Restaurant Services and other Auxiliary Services. Alternatively, Royal Caribbean and Celebrity Cruises split the department between Culinary and Food & Beverage Services.

For the sake of simplicity, we have broken the Food and Beverage Department into Culinary Cruise Jobs and Food and Beverage Service Cruise Jobs. The head of the Food and Beverage Department is the Food and Beverage Manager.

Food and Beverage Manager

Other Job Titles:  F&B Director (Princess Cruises, NCL)

Job Description:  The Food and Beverage Manager is responsible for the overall operations of all food and beverage outlets on the cruise ship. The Executive Chef, Maitre D’ Hotel, and Beverage Manager all report to the Food and Beverage Manager.

Experience and Skills Required:  For example, Royal Caribbean expects their Food and Beverage Managers to have at least five years of food and beverage experience in a management capacity with a cruise line, resort, or hotel.

Typical Rank:  3 to 3 1/2 stripes

Average Salary:  $5,000 to $8,000 per month

Food and Beverage Service

Maitre d’ hotel.

Other Job Titles:  Maitre D’ (Princess Cruises), Restaurant Manager (Royal Caribbean, Celebrity Cruises, NCL)

Job Description:  Responsible for the smooth operation and management of all restaurants; Supervises a team of Head Waiters, Waiters and Assistant Waiters; Manages restaurant budgets in terms of staffing; Oversees guest table assignments.

Experience and Skills Required:  Candidate must have at least one year experience as a Restaurant Manager or Maitre D’ Hotel on a cruise ship or large upscale restaurant; Experience managing a multinational staff; Experience using a computerized table reservation system. Post secondary education is preferred

Average Salary:  $2,500 to $6,000 per month

Beverage Manager

Other Job Titles:  Assistant Beverage Manager (Royal Caribbean), Bar Manager (Celebrity Cruises), Food and Beverage Manager Bars (Princess Cruises), Beverage Manager (NCL, HAL)

Job Description:  Manages a handful of bar outlets and their respective bar supervisors. This manager must be able to motivate and train crew on service and selling techniques. This beverage manager oversees sales, inventory, work schedules, and cost control.

Experience and Skills Required:  For example, Royal Caribbean expects their applicants for Assistant Beverage Manager will have more than five years of experience working for a cruise line or luxury hotel. They also want the applicant to have at least two years of bar management experience supervising a staff of at least 30 employees. Alternatively, NCL requires a minimum of three years. Knowledge of Micros point of sale, USPH, and beverage products is also required.

Average Salary:  $2,500 to $4,000 per month

Assistant Maitre D’ Hotel

Job Descriptions:  Assists the Maitre D’ Hotel with the responsibilities of overseeing the service of a restaurant. The Assistant Maitre D’ is responsible for managing a team of waiters and assistant waiters.

Experience and Skills Required:  Most cruise lines expect an applicant to have at least two years of related experience on a cruise line, or in a large hotel. A college or university education with a focus on hospitality is preferable. Courses in USPH standards are required. The Assistant Maitre D’ must also have the physical ability to perform all duties of the job. Additional computerized experience is an asset.

Average Salary:  $2,000 to $3,000 per month

Food and Beverage Supervisor

Job Description:  Oversees the food and beverage service in the buffet restaurant; supervises the buffet stewards.

Experience and Skills Required:  Most cruise lines expect an applicant to have at least two years of related experience on a cruise line, or large hotel. A college or university education with a focus on hospitality is preferable. Courses in USPH standards are required. The Food and Beverage Supervisor must also have the physical ability to perform all duties of the job. Additional computerized experience is an asset.

Average Salary:  $1,200 to $1,500 per month

Head Waiter

Job Description:  Oversees a section of a restaurant; assists the Maitre D’ in the supervision of the waiters and assistant waiters.

Experience and Skills Required:  Candidates must have at least five years experience in hospitality management preferably on a cruise ship or other high volume restaurant.

Average Salary:  $1,200 to $3,500 per month

Head Wine Steward

Other Job Titles:  Head Wine Steward (NCL), Sommelier (Royal Caribbean, Celebrity Cruises)

Job Description:  Provides wine service in the restaurant; suggests wine pairing for the guests; maintains sales targets; hosts wine tasting seminars.

Experience and Skills Required:  Candidates must have a minimum of five years of bar related experience on a cruise ship or other high volume restaurant. Sales skills are an asset.

Other Job Titles:  Server (Disney Cruise Line)

Job Description:  Provides food and beverage service for guests in one of the onboard dining rooms or specialty restaurants.

Experience and Skills Required:  Candidates must have at least five years of waiter experience, preferably on a cruise ship or other high volume restaurant.

Average Salary:  $1,200 to $2,000 per month

Assistant Waiter

Other Job Titles:  Junior Waiter (Princess Cruises), Assistant Server (Disney Cruise Line)

Job Description:  Assists the waiter with food and beverage service for the guests in one of the onboard dining rooms or restaurants.

Experience and Skills Required:  Candidates must have at least three years of waiter experience in preferably on a cruise ship or other high volume restaurant.

Average Salary:  $1,000 to $1,500 per month

Buffet Steward

Other Job Titles:  Quick Service Attendant (Disney Cruise Line)

Job Description:  Maintains the buffet restaurant seating areas; ensures cleanliness of tables, chairs and floors to USPH standards; keeps areas stocked with supplies.

Experience and Skills Required:  Candidate should be able to work long hours on their feet; should have a great attention to detail; friendly with guests; able to work quickly when required.

Average Salary:  $700 to $1,000 per month

Assistant Buffet Steward

Job Description:  Assists the Buffet Steward with their duties

Average Salary:  $600 to $800 per month

Bar Supervisor

Other Job Titles:  Assistant Bar Manager (Royal Caribbean, Celebrity Cruises), Assistant Beverage Manager (HAL), Bar Supervisor (Princess Cruises)

Job Description:  Manages the operation of a single bar or multiple bars, depending on cruise ship; supervises a team of bartenders and bar stewards.

Experience and Skills Required:  Candidates must have a minimum of five years of bar management experience on a cruise ship or in a high volume luxury resort; Post secondary education is a plus.

Average Salary:  $1,200 to $1,700 per month

Job Description:  Prepares alcoholic and non-alcoholic cocktails; Fulfills orders placed by bar stewards in a timely manner; Complies with USPH cleanliness, preparation and storage regulations.

Experience and Skills Required:  Candidates must have a minimum of five years of bartending experience on a cruise ship or in a high volume luxury resort. Post secondary education is a plus.

Bar Steward

Job Description:  Serves beverages to guests; Takes drink orders from guests.

Average Salary:  $700 to $1,200 per month

Bar Utility

Other Job Titles:  Assistant Bar Steward

Job Description:  Assists the Bartender with stocking the bar; Stocks the bar with glassware, beverages, and miscellaneous items.

Experience and Skills Required:  Potential candidates should have bartending experience on a cruise ship or a high volume luxury resort. Most bartenders start as a Bar Utility.

Culinary Service

Executive chef.

Job Description:  Oversees all culinary operations onboard. Ensures all food handling, cooking, cleaning, and storing is in accordance with USPH, environmental, and safety regulations.

Experience and Skills Required:  Minimum two year culinary degree coupled with a certification in sanitation and public health; The candidate for Executive Chef must have at least five years of experience as an Executive Chef on a cruise ship or high volume upscale restaurant; Must be experienced in a number of cuisines; Understanding of bakery, pastry and butcher operations.

Average Salary:  $4,500 and up per month

Executive Sous Chef

Job Description:  Manages an assigned galley; Ensures all food handling, cooking, cleaning, and storing is in accordance with USPH, environmental, and safety regulations.

Experience and Skills Required:  Minimum two year culinary degree coupled with a certification in sanitation and public health; Candidate for Executive Sous Chef must have at least two years of experience as an Executive Chef or five years as an Executive Sous Chef on a cruise ship or high volume upscale restaurant.

Average Salary:  $3,500 to $5,000 per month

Job Description:  Manages a section of an assigned galley; Ensures all food handling, cooking, cleaning, and storing is in accordance with USPH, environmental, and safety regulations.

Experience and Skills Required:  Minimum two year culinary degree coupled with a certification in sanitation and public health; Candidate for Sous Chef must have at least five years as a Sous Chef on a cruise ship or high volume upscale restaurant.

Average Salary:  2,000 to $4,000 per month

Chief Butcher

Experience and Skills Required:  Applicants should have a minimum of two years of management experience related to inventory or storeroom supervision. Experience with computers an asset. Knowledge of USPH storing and cleaning procedures is also required.

RESPONSABILITIES:

  • Maintains the cleanliness of the bar work areas and follows 1. proper washing and sanitation of glasses, work areas, utensils, pantries, floors, equipment, etc. Washes worktables, walls, refrigerators, equipment and all related surfaces and counters. Sweeps and mops floor. Utilizes proper USPH sanitation procedures at all times.
  • Segregates and removes trash and garbage and places it in designated containers. Steam cleans or hoses out garbage cans. Utilizes proper USPH sanitation procedures at all times.
  • Collects used glassware and transports them to the galley. Places glasses in the proper racks or on conveyor to dishwashing machine. Operates washing machine according to instructions. Inspects glasses for cracks, chips and removes them from circulation. Returns clean glasses to their appropriate places according to handling procedures. Utilizes proper USPH procedures at all times.
  • Ensures an adequate supply of glassware is on hand at all times. Retrieves glassware from central location and restocks as needed. Utilizes proper USPH procedures at all times.
  • Keeps ice bins stocked at all times. Retrieves ice from central location and restocks as needed. Utilizes proper USPH procedures at all times.
  • Ensures dry snack bowls are filled at all times. Utilizes proper USPH procedures at all times.
  • Collects and transports a variety of supplies between storage and work areas. Places items in the appropriate location in the bar. Utilizes proper USPH procedures at all times.
  • Participates with the bar staff in all activities required in opening and/or closing the bar. Utilizes proper USPH procedures at all times.

REQUIREMENTS:

  • Previous utility or cleaning experience in a 4 or 5 star restaurant, hotel, lounge, cruise ship etc. preferred.
  • Ability to identify bar glassware and bar supplies. Basic knowledge of bar equipment (blenders, flash blenders, ice machines)
  • Ability to collect and transport supplies from various locations throughout the vessel.
  • Minimum 21 years old
  • Good level of English

POSITION SUMMARY

Maintains bar work areas, glassware, equipment and utensils in clean, orderly and stocked condition. Responsible for supporting bar operations by performing the following essential duties and responsibilities.

ESSENTIAL DUTIES AND RESPONSIBILITIES

All duties and responsibilities are to be performed in accordance with Royal Caribbean International’s The Royal Way, SQM standards, USPH and HACCP guidelines, ServeSafe, environmental, and workplace safety policies and procedures. Each shipboard employee may be required to perform all functions in various food and beverage service venues throughout the ship. In accordance with Royal Caribbean International’s philosophy of Anchored in Excellence , each employee conducts oneself in a professional and courteous manner at all times. This consists of physical and verbal interactions guests or fellow shipboard employees and/or in the presence of guest contact and crew areas. 1. Maintains the cleanliness of the bar work areas and follows proper washing and sanitation of glasses, work areas, utensils, pantries, floors, equipment, etc. Washes worktables, walls, refrigerators, equipment and all related surfaces and counters. Sweeps and mops floor. Utilizes proper USPH sanitation procedures at all times. 2. Segregates and removes trash and garbage and places it in designated containers. Steam cleans or hoses out garbage cans. Utilizes proper USPH sanitation procedures at all times. 3. Collects used glassware and transports them to the galley. Places glasses in the proper racks or on conveyor to dishwashing machine. Operates washing machine according to instructions. Inspects glasses for cracks, chips and removes them from circulation. Returns clean glasses to their appropriate places according to handling procedures. Utilizes proper USPH procedures at all times. 4. Ensures an adequate supply of glassware is on hand at all times. Retrieves glassware from central location and restocks as needed. Utilizes proper USPH procedures at all times. 5. Keeps ice bins stocked at all times. Retrieves ice from central location and restocks as needed. Utilizes proper USPH procedures at all times. 6. Ensures dry snack bowls are filled at all times. Utilizes proper USPH procedures at all times. 7. Collects and transports a variety of supplies between storage and work areas. Places items in the appropriate location in the bar. Utilizes proper USPH procedures at all times. 8. Participates with the bar staff in all activities required in opening and/or closing the bar. Utilizes proper USPH procedures at all times. 9. On boarding days, loads shipments from vendors onboard the vessel to storage area and then to assigned bar. 10. Attends meetings, training activities, courses and all other work-related activities as required. 11. Able to accurately complete transfer documentation. 12. Performs related duties as required. QUALIFICATIONS

Hiring Requirements:

  • Successfully completes Royal Caribbean International’s Alcohol Awareness Training Tests (ServSafe) with a passing score, within 30 days of contract.
  • Previous utility or cleaning experience in a 4 or 5 star restaurant, hotel, lounge, cruise ship etc. preferred.
  • Ability to work independently and assess bar needs for restocking
  •  Completion of high school or basic education equivalency preferred.
  • Ability to identify bar glassware and bar supplies. Basic knowledge of bar equipment (blenders, flash blenders, ice machines)
  • Ability to collect and transport supplies from various locations throughout the vessel.
  • Completion of high school or basic education equivalency preferred.
  • Ability to speak additional languages such as Spanish, French, German, Italian, or Portuguese is preferred.

Internal Candidate Requirements:

In addition to the stated hiring requirements, internal candidates are required to fulfill the following:

  • Must meet the external hiring requirements as detailed above.
  • Actively follows ServSafe responsible service of alcoholic beverages.
  • Successfully passes ServSafe training within the first 30 days of contract.
  • Must have been in current, permanent position and completed one entire contract with a performance rating of Satisfactory or above in that position before applying.
  • No written warnings on file within the past 6 months.
  • Must successfully complete the process for Shipboard Job Applications.

Language Requirements:

  • Ability to speak English clearly, distinctly, and cordially with guests.
  • Ability to read and write English in order to understand and interpret written procedures. This includes the ability to give and receive instructions in written and verbal forms and to effectively present information and respond to questions from guests, supervisors, and co-workers.

Physical Requirements:

While performing the duties of this job, the shipboard employee is regularly required to stand for long periods of time; walk; use hands to touch, handle, or feel; reach with hands and arms; talk or hear; and taste or smell. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus. All shipboard employees must be physically able to participate in emergency life saving procedures and drills. Full use and range of arms and legs s well as full visual, verbal and hearing abilities are required to receive and give instructions in the event of an emergency including the lowering of lifeboats. Ability to lift and/or move up to 50 pounds.

Key Accountabilities

  • He/She is responsible for the service at the bars and for the area outside the respective Bars.
  • The Barkeeper reports directly to the Bar Manager. In the absence of the Barkeeper the Asst. Barkeeper takes over His/Her responsibilities.

  • He/She is responsible for the bar service and beverage sales in and outside the respective Bar.
  • He/She is responsible for the bar stock of beverages
  • He/She follows the Inventory Control Procedures.
  • He/She registers and controls all beverage sales on the passengers' accounts.
  • He/She follows beverage requisition procedures.
  • He/She is responsible for reporting and following up on maintenance and repairs and for the cleanliness of the bar he/she is assigned to.
  • He/She is responsible for the training and supervision of the bar staff assigned to him/her.

Overall Bar Service

  • All bars must be clean, orderly and properly prepared prior to bar opening.
  • He/She is responsible for maintaining all bars, lounges and pantries and for an efficient service to the passengers.
  • He/She always presents a clean Bar List to the passengers and has sufficient Bar Lists on stock.
  • He/She has a complete knowledge of all drinks listed.
  • He/She is aware that it is against Company Rules to work without a shot glass.
  • The proper glass and garnitures must be used for each drink.
  • He/She must prepare or mix drinks in front of passengers when served from the bar.
  • He/She ensures that the brand ordered by the passenger is served.
  • He/She cleans the bar counter, tables and ash-trays, places chairs and tables in orderly positions and keeps the entire area clean and tidy at all times.
  • He/She passes on any complaints from passengers to the Bar Manager.
  • As our Company grows, so will our need for loyal, skilled management and, therefore, bar personnel have every opportunity of promotion to higher positions.
  • Notice and check all beverage transfers from Bartender to Bartender.
  • All Bars must be ready for business not later than 10 minutes before opening.
  • Ordering goods from Provision storerooms in a timely manner and use of appropriate forms.

Staff Training and Control

  • He/She trains and supervises His/Her staff on a permanent basis in order that they perform their duties in a proper manner.
  • He/She establishes a good working spirit and is co­operative with all other Bar Staff.
  • Inventory/Stock Control
  • He/She is responsible for maintaining the indicated beverage stock at all times.
  • He/She follows the established routines for requisitioning of stores and ensures that Customs requirements are fulfilled during sealing of stores while in Port.
  • Inventory controls will be carried out without any prior notice.
  • He/She uses the correct measures for all drinks.
  • He/She ensures that all goods are safe, and securely stored, to prevent damages.

Accounting Control and Procedures

  • He/She is responsible for the proper handling of the cash-register and the registration of all beverages sold.
  • Complete honesty is required at all times. No Barkeeper is to give any drink from the Bar without the drink being properly registered on the Bar cheque.
  • The Bar cheque should be presented to each party after completing service.

Cleaning and Maintenance

  • He/She is responsible for the proper cleaning and sanitary matters of all bars.
  • He/She ensures that everybody in his/her Bar fulfils those requirements.
  • Prior to service, He/She cleans all tables, cleans and brushes chairs and sofas, cleans ash-trays and places a Bar List on each table.
  • He/She handles all working material and equipment correctly and keeps it well cleaned.
  • He/She reports any necessary repairs to the Bar Manager and follows up on repairs.
  • He/She follows the OS Public Health requirements and is familiar with their sanitation procedures.

Appearance/Personal Hygiene

  • The appearance of the entire personnel on board the ship reflects the reputation and image of the company, therefore a great deal of emphasis is placed on a professional appearance.
  • The Company expects you to maintain the highest standard of personal appearance and hygiene at all times.
  • If in passenger areas full uniform is to be worn: hat, scarf, jacket, name tag, pants and proper shoes.
  • Have a clean neat personal appearance.
  • Special attention to grooming, hygiene care and clean and proper uniforms and shoes.
  • Hair must be well groomed, neat and not extend over the shirt collar and always be kept clean.
  • A moustache is acceptable if kept neatly trimmed.
  • Big earrings and big necklaces are not to be worn on duty and more than one moderate size ring is not acceptable.
  • Smoking is not permitted while on duty.
  • Approach passengers in a friendly manner, show a helpful attitude at all times, always have a smile and be courteous and pleasant.
  • Have a neat, clean personal appearance and pay special attention to grooming and hygiene care. Wear clean uniform and shoes, always use a deodorant, cologne and mouth wash.
  • Be punctual when reporting for duty and follow the work schedules.

Bar Staff Positions on Cruise Ships

There are several bar positions available on cruise ships including bartender, barback, cocktail servers and bar manager. To become a bartender on cruise ships, you must have a minimum of three years experience behind the bar at a restaurant, club, pub, or lounge and you must also have experience working on cruise ships. Cruise ship experience is flexible, meaning, cocktail server experience may be acceptable or waiter experience may be ok. Experience behind the bar on cruise ships is always best, but as long as you have experience behind the bar in any establishment , you have a chance at a position. Same deal with barbacks and cocktail servers. The more experience you have in your chosen area (on land or at sea) the better, but cruise experience certainly helps.

Bar managers must have even more experience. Bartender and (bar manager) positions are among the most sought after jobs on the ship. Not only are bartenders and bar manager’s part of the most festive environment on the ship, they make a handsome salary plus tips. With tips, bartenders can earn anywhere from $1,700-$2,400+ per month. Bar managers, on the other hand, earn anywhere from $3,000 per month on the low end up to an impressive $3,800+ per month on the high end. Cocktail servers earn $1,400-$2,200 per month (including tips) and barbacks (bar utility workers) earn $600-$900 per month including tips. In addition to competitive salaries, bar staff members receive free air travel to and from the ship, free accommodations, health insurance, and retirement benefits.

Bar managers must know all there is to know about bartending, but they must also have a background in management, accounting skills, and computer skills. Bar managers are responsible for all bar operations including scheduling, ordering supplies and beverages, meeting with vendors, accounting, scheduling, and supervising staff. It is not uncommon for top earning bar managers to have a degree in hospitality or related field, or even business management. It is entirely possible to work your way up from bartender to bar manager, but this route typically takes years to navigate.

Bartenders, bar managers, cocktail servers, and barbacks are in the “Service and Hospitality Department” on ships. Also called the Hotel Management Department, the Service and Hospitality Department is home to Hotel Managers, Cabin Stewards/Stewardesses, Accountants, Executive Chefs, Wine Stewards, Chief Pursers, Purser Staff, Bellman, and Pastry Chefs. Besides bar manager, most service positions earn a significant amount of extra income from tips.

If you are interested in becoming a bar staff member on cruise ships, you should begin your search for a position by picking a cruise line (or two). Once you have a specific cruise line in mind, locate the cruise lines’ OFFICIAL website. Visit the Ships and Cruises Directory for official listings. Visit the cruise lines’ website and search around for job postings. Most cruise line websites have a career center or job postings page. If the cruise line lists job openings, be sure to follow the application procedure to the letter . Applicants that do not follow directions are typically passed over in favor of those that do.

If the cruise line does not have job openings on its site (which is unlikely), send a polished cover letter and resume to the cruise lines’ Human Resources Department. The Human Resources Department is typically located at the cruise lines headquarters. This information is usually listed on the cruise line website. It is important to include the position you are interested in so that it can be directed to the appropriate department manager.
